Old Fashioned Bean Soup

Ingredients:

  • 1 1/2 cup navy beans
  • 1/2 tsp. salt
  • 1 qt. milk
  • 1 stick butter
  • dash pepper
  • toasted bread crumbs

Directions:

Add salt to beans and cook until soft. Pour off water. Add milk, butter, pepper and more salt, if desired, and heat through. Serve with toasted bread crumbs on top. Serves 6.

Recipe: Bean Soup

Ingredients

  • 1 med. potato, peeled and diced
  • 2 carrots, diced
  • 1 med. onion, diced
  • 1/2 cup celery, diced
  • 3 cups water

Directions

Simmer 10 minutes. Add 1 can Bean and Bacon Soup. (I would suggest cooking the carrots by themselves until tender as they aren't always done in the time allotted.) Heat through.

Recipe: Bean Soup

Ingredients

  • 1 lb. dried great northern beans
  • 1 meaty ham bone or 2 smoked ham hocks
  • 3 medium onions, chopped
  • 3 garlic cloves, minced
  • 3 celery ribs, chopped
  • 1/4 cup chopped fresh parsley
  • 1 cup mashed potatoes or 1/3 cup instant potato flakes
  • salt and pepper to taste
  • Parsley or chives for garnish

Directions

In a large kettle, place beans, ham bone or hocks and 3 qts. water. Bring to boil. Reduce heat; cover and simmer for 2 hours. Skim fat if necessary. Add onions, garlic, celery, parsley, potatoes, salt and pepper; simmer 1 hour longer. Remove meat and bones from the soup. Remove meat from the bones; dice and return to kettle. Heat through. Garnish with parsley or chives. 8-10 servings.
