Use Up Extra Milk By Making Pudding

Don't let the milk spoil.

I stock up on our favorite pudding when it's on sale at Walgreens (Usually 3/$1). If my milk is close to expiring I just make a batch of pudding for dessert.

Use Cast Iron Skillet for Inexpensive Bacon Press

Most bacon presses can run anywhere from $10 all the way up to $20 and $30. P>A much cheaper and just as effective option is a cast iron skillet. Cut long bacon slices in half and lay them in a large skillet.

Place a smaller cast iron skillet (one that will sit comfortably in the larger skillet) on top of bacon as a "press".

The weight of the cast iron creates a perfectly flat piece of bacon with no curling whatsoever!

Simple Iced Tea

This is super yummy iced tea that uses less tea bags and no energy, and is not bitter.

Ingredients:

  • 4 tea bags
  • 2 quart pitcher or 2 liter rinsed out soda bottle.

Directions:

Fill your container with water. Put 4 tea bags into your container, and leave the "tags" dangling over the side (or remove tags altogether).

Add sugar or sweetener is you wish (1 cup of sugar or less depends on how sweet you want it), or no sugar at all if you (like me) prefer unsweetened tea.

Place in refrigerator overnight. In the morning remove the tea bags.

Perfect iced tea every time, and super easy, with no energy wasted. There is no bitterness you sometimes get with boiled tea. No sun necessary. Use whatever container you like.

Italian Pork

Delicious, easy, doesn't heat up the house.

Ingredients:

  • small pork roast or 6-8 large chops
  • 1 pkg 8 oz creamed cheese
  • 2 cans cream of mushroom soup
  • 1 chopped onion
  • 1 package dry Italian salad dressing mix
  • rice

Directions:

Mix everything except the rice and pork. Place pork in crockpot. Pour mixture over the pork and set crockpot on low and cook all day. 20 minutes before serving, cook rice. Top rice with the pork and gravy.

Servings: 6
Time:10 Minutes Preparation Time
8 Hours Cooking Time

Hush Puppies

Best Hush Puppies ever! Very good!

Ingredients:

  • 1 cup corn meal
  • 1 cup self rising flour
  • 1 large onion, chopped fine
  • 1 can cream corn

Directions:

Mix all ingredients together.

Drop a tablespoon at a time into hot cooking oil. They will float and become brown when done.

Source: Older family member has made for years and shared the recipe over and over.

Crockpot Raisin Bread Pudding

If you like Raisin Bread Pudding and want a simple easy way to make great bread pudding you have to try this.

Ingredients:

  • 12 slices of Sunmaid Raisin Bread with Cinnamon Swirl, lightly toasted and cut into cubes
  • 2 1/2 cups milk, scalded, cooled slightly
  • 2 eggs beaten
  • 3/4 cup sugar
  • 1/4 tsp. cinnamon
  • Dash Nutmeg (Optional)
  • Dash salt
  • 1 tsp. vanilla extract
  • 2 Tbsp. melted butter

Directions:

Lightly butter the crock pot then add toasted bread cubes,

In bowl whisk together the scalded milk, eggs, sugar, cinnamon, nutmeg, salt, vanilla and melted butter. Pour mixture over the bread cubes.

Gently using a large spoon or spatula, press bread cubes down into mixture so all bread pieces will soak up milk mixture. Do not stir.

Cover and cook on low setting for 5 to 6 hours until bread pudding is set.

Serve with dessert sauce or whipped cream.

Servings: 8
Time:About 15 to 18 minutes Minutes Preparation Time
5 to 6 Hours Cooking Time

Source: This is a recipe I found on About.com but I altered the bread from the French Bread they called for to the Sunmaid Raisen Bread with Cinnamon Swirl.

Potato Pancakes

Ingredients:

  • 3 large potatoes, peeled and grated
  • 2 onions, grated
  • 2 Tbsp. flour
  • 2 eggs, beaten
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • Crisco or lard for frying (use solid shortening)

Directions:

Mix the grated potatoes and onion; drain off excess moisture. Stir in the flour, eggs, salt and pepper. Drop by tablespoonfuls into not too deep hot fat. Brown and turn; drain on paper towels. Serves 6.

Beef Kebabs with Cumin

Ingredients:

  • 2 lbs. boneless sirloin steak
  • 2 medium onions, thinly sliced
  • 1/2 cup salad oil
  • 3 tsp. ground cumin seeds
  • 1/2 tsp. ground black pepper
  • 1 tsp. salt
  • 2 Tbsp. lemon juice
  • 2 Tbsp. softened butter

Directions:

Cut steak into 3/4 inch cubes. Combine onions, salad oil, cumin seeds, pepper, salt and lemon juice. Place beef into a glass dish, pour spiced salad oil over. Marinate overnight in refrigerator. Fasten beef onto skewers and broil next to charcoal until brown. Brush with softened butter.

Chocolate Pudding Cake

Ingredients

  • 1 cup flour
  • 1/4 tsp. salt
  • 2 tsp. baking powder
  • 3/4 cup sugar
  • 2 Tbsp. cocoa
  • 1/2 cup milk
  • 2 Tbsp. cooking oil
Topping:
  • 1 cup light brown sugar
  • 1/4 cup cocoa
  • 1 3/4 cups very hot water (not from tap)

Directions

Mix dry ingredients together. add milk and oil. Beat well. Spread in 8 inch square pan, well greased. Mix sugar and cocoa in topping and sprinkle over cake. Pour 1 3/4 cup very hot water over all through a slotted spoon, slowly. Bake at 350 degrees F for 45 minutes. Fudge pudding layer forms under cake.

Kidney Bean Salad

Not one of my favorites, but many people do like this, so I'll offer it. I'm told it's a very good salad, for those who like kidney beans. (Not me!) :)

Ingredients:

  • 2 Tbsp. diced onion
  • 1/4 cup sugar
  • 1/4 cup wine vinegar
  • 1 large can kidney beans, drained
  • 2 Tbsp. diced celery
  • 1/4 cup salad oil
  • dash salt

Directions:

Combine above ingredients and let set 1-2 hours in refrigerator before serving.
