Cheap Reception Food Ideas

My husband's niece is getting married October 15, 2005, she has just informed her grandmother that she is going to take care of the reception. I still have all the decorations from my wedding so we will be using those, but we REALY need some CHEAP food ideas. As of now, I don't even know what time of day this wedding is supposed to be taking place. Please Help!

Keeping Cilantro (Coriander) Fresh

Can anyone tell me how to keep fresh cilantro? When I buy it, there is so much in a bundle that I have trouble using it all before it starts to go bad. I usually just keep it in the bag, it comes with a papertowel in it to absorb moisture and I leave the bag partially open to breath. I'm sure there is a way that would keep it fresh longer.

Recipe Using Day Old Bagels

I'm looking for ways to use bagels that are a few days old. Has anyone used them in a breakfast casserole type of a recipe or bread pudding or stuffing, etc.? I'd love to have recipes or direct me to a Website that might have some ideas.

Please help, me as I'm trying to be frugal on a limited income.

Lemon Asparagus Chicken

Ingredients

  • 1 Tbsp. vegetable oil
  • 4 skinless, boneless, chicken breasts
  • 1 can (10 3/4 oz) cream of asparagus soup
  • 1 Tbsp. lemon juice
  • 1/4 cup milk
  • 1/8 tsp. pepper

Directions

Heat oil in skillet. Add chicken and cook for about 10 minutes or just until browned. Add soup, milk, lemon juice and pepper. Heat to a boil.

Reduce heat and cover. Continue to cook over low heat for about 5 minutes or until done.

Best Onion Rings

Ingredients

  • 2 cups flour
  • 2 cups beer
  • 2 tsp. salt
  • 4 pounds sweet red onions
  • peanut oil

Directions

Whisk together flour, beer, and 2 teaspoons salt ; cover and let stand for 3 hours. meanwhile soak onion slices in ice water or milk. Remove onions; place on wire rack, allowing excess to drip off. Pat dry, dip into batter, allow excess batter to drip off. Add to oil and fry until golden on both sides. Drain on paper towels. Salt light and serve hot.

The Original Potato Skin Appetizer

The first time I had potato skins, it was an appetizer at a Beverly Hills restaurant. They were so good, I wanted to have them all the time. Years later, they became a fad, but the ones that became a fad weren't anything like the ones I member.

The ones I remember were actually very crisp potato skins, cut into lengthwise quarters, like long, dark, thick potato chips. They had no potato "insides" at all on them. They were merely spread with creamy peanut butter or sauté sauce, which had melted slightly from the warmth of the skins.

This was a delicate, lovely, yummy appetizer.

How do you crisp empty potato skins? Ten minutes at 375.

Fantasy Fudge Sauce

(prep. time: 5 minutes)

Ingredients

  • 1 cup hot fudge ice cream topping
  • 2-3 Tbsp. liqueur (ex: almond flavored, coffee flavored, Irish cream flavored, etc.)*

Directions

Whisk your favorite liqueur into hot fudge topping. Serve over ice cream, yogurt, cheese cake, cake, blend with coffee or as a dip for fresh fruits. Serves: 9

*Can substitute 1/2-3/4 tsp. extract or flavoring of your choice.

This would be an excellent gift for someone special or to the person who has everything. Just print off this recipe and give with the gift (to give them ideas on how to use and the recipe).

Giant Chocolate Chip Cookie

Ingredients

  • 1/2 cup (1 stick) butter or margarine, softened
  • 2/3 cup firmly packed brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 1/3 cup all purpose flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 (6 oz.) bag semisweet chocolate chips
  • 1/2 cup chopped nuts, optional

Directions

Preheat oven to 350 degrees F. In a large mixing bowl, cream butter and sugars till light and fluffy. Beat in egg and vanilla till well blended. Gradually beat in flour, baking soda, and salt till well mixed. Fold in chocolate chips and nuts. Spread dough evenly in a greased 12 inch pizza pan. Bake at 350 degrees for 15-20 minutes or till golden brown. Cool. Can cut in wedges (makes 16 wedges).

Makes great gifts! Would make a great surprise for that special college student, etc. If giving as a gift, it's best to leave whole (easier to wrap).

Fried Green Tomatoes

Slice 5 to 6 green tomatoes. Place the green tomatoes in milk and soak for one hour or more. Keeping the rest of the milk, add one egg and beat until foamy. Add a little more milk if needed. Dip tomato slices in 1/2 corn meal and 1/2 flour mixture. Fry until crispy in olive oil..{original recipe calls for lard}. If lard is still used, this really is the best way to fry the green tomatoes.
