Broccoli-Cheese Nuggets

Ingredients

  • 1 package (16 ounces) frozen broccoli florets, thawed
  • 2 cups shredded extra sharp cheddar cheese
  • 1/2 cup dehydrated potato flakes
  • 1/4 cup grated parmesan cheese
  • 4 slices cooked ham, diced (about 1 cup)
  • 2 large eggs
  • 1 tsp. dijon style mustard
  • 1 tsp. salt
  • 1/4 tsp. freshly ground black pepper

Directions

Cook broccoli according to package directions. Drain cooked broccoli thoroughly in a colander, pressing with the back of a wooden spoon to remove excess water. Chop broccoli into 1/4 inch pieces. Preheat oven to 400 degrees F. Generously grease a large baking sheet. In a large bowl, combine broccoli, cheddar, potato flakes, parmesan, ham, eggs, mustard, salt and pepper, stir until mixture is thoroughly blended. Let stand for about 10 minutes. Drop generous Tbsp. of mixture, about 1 inch apart onto the prepared baking sheet. Bake nuggets until golden brown around the edges, about 20 minutes. Using a spatula, remove nuggets from baking sheet and transfer to platter. Serve immediately.
