Whole Wheat Pancake Mix

I make this mix and pack it into a quart jar. This makes a big batch of pancakes.

Ingredients:

  • 3 cups whole wheat flour
  • 3/4 cup non fat powdered milk
  • Advertisement

  • 3 Tbsp. packed brown sugar (I use Wheylow gold, a sub for diabetics.)
  • 3 Tbsp. baking powder
  • 1 1/2 tsp. low sodium salt

Directions:

When I want to make a batch I dump it into a large bowl and add:

  • 3 eggs (or egg substitute equal to 3 eggs*)
  • 1/3 cup of canola oil
  • 2 tsp. of vanilla
  • 2 1/4 cups of water (more if needed)

*Note; 1 Tbsp. of ground flax seed mixed with 1/4 cup of water is a great egg substitute for baking in pancakes, cakes, muffins, etc.

Sometimes I get spunky, and I have added bananas, cinnamon, and chopped pecans to make Banana Pancakes. I have added cinnamon and chopped apples, and I have added blueberry.

We don't make pancakes that often so I will make up a batch of this one and store it in the pantry or frig. Thanks for this recipe, whole wheat is recommended by our Dr.
