Beef 'n Bean Chili
- Leftover 1/3 of meatloaf, crumbled, 3 cups
- 2 cans kidney beans, rinsed, drained
- 2 cans tomato sauce
- 1 jar salsa
- 1 tsp. chili powder
- Sour cream, cilantro and cornbread, opt.
(This recipe uses the 1/3 of the Southwest Meatloaf that was reserved in the last recipe)
In pot over medium heat combine meatloaf, beans, tomato sauce, salsa and chili powder. Cook, stirring occasionally, until heated through, 12-15 minutes. If desired, garnish with sour cream and cilantro and serve with cornbread or maybe biscuits.
