Iced Brownies Deluxe

Ingredients

  • 1 cup margarine
  • 3 squares unsweetened chocolate
  • 4 eggs, beaten
  • 2 cups sugar
  • 1 1/2 cup flour
  • 1 tsp. baking powder
  • 1 cup chopped pecans
  • 2 tsp. vanilla
  • 4 cups mini marshmallows

Icing

  • 1 cup sugar
  • 3/4 cup evaporated milk
  • 1/2 cup margarine
  • 2 squares unsweetened chocolate
  • 1 box powdered sugar (1 lb.)
  • 1 tsp. vanilla

Directions

Melt margarine and chocolate in top of double boiler; set aside. Combine eggs and sugar, beating well. Add flour and baking powder which have been sifted together, mixing well. Add chocolate mixture, pecans and vanilla. Pour into 2 greased 9x13 pans and bake at 325 for 20 minutes. Remove brownies from oven and cover top with marshmallows. Return to oven for 5 minutes or just until marshmallows melt. Ice brownies while warm.

For Icing: combine sugar, milk, margarine and chocolate; cook over medium heat until soft ball stage (236 degrees). Add powdered sugar and vanilla. Beat until smooth. Spread over brownies while warm. Cut into squares when cool.

If I wanted to make this with cocoa powder instead of unsweetened chocolate, would it work and do you know how much I'd use? Thanks.
