Crunch Coated Lemon Chicken

This recipe is simple and uses deglazing of the skillet to make a great sauce.

Ingredients:

  • 4 skinned and boned chicken breast halves

  • 1 large egg, slightly beaten
  • 1/4 tsp. salt
  • 1/2 cup wheat germ (fine, dry breadcrumbs from a can, may be used if you don't have any wheat germ.)
  • 1 Tbsp. butter or margarine
  • vegetable cooking spray
  • 3 Tbsp. lemon juice
  • lemon slices without seeds in them for garnish

Directions:

Place chicken between two sheets of heavy-duty plastic wrap, and flatten to 1/2 inch thickness, using a rolling pin or meat mallet.

Combine egg and salt. Dip each piece of chicken in egg mixture. Dredge in wheat germ.

Melt butter in large skillet coated with cooking spray over medium heat. Add chicken. Cook until done, 3 minutes or more. Remove chicken and keep warm.

Add lemon juice to skillet. Cook over high heat, deglazing skillet by scraping bits that cling to bottom of skillet. Pour over chicken.

Garnish with lemon slices, if desired.
