Baked Breads Still Having a Gooey Center

What causes some breads to bake completely and some to have a gooey middle even after extra time baking? I'm talking about breads like banana bread, breads made with a starter, etc.

Today's Recipes:

Beef Burgers

  • 1 cup raw carrots (grated)
  • 1 cup raw potatoes (grated)
  • 2 Tbsp. chopped onion
  • 2 Tbsp. chopped parsley
  • 1/2 cup chopped celery
  • 1 lb. ground beef
  • 1 beaten egg
  • 1/4 cup water
  • 1/4 cup oatmeal or bread crumbs
Mix all ingredients together. Salt to taste. Form into patties. Place on oiled pan. Bake in 400 degree F oven for 20 minutes.

Cheese Scalloped Potatoes

  • 4-6 medium potatoes, sliced
  • salt to taste
  • 2 Tbsp. butter
  • 1 can cheese soup
  • 1/3 can milk
Preheat oven to 350 degrees F. Break butter over potatoes, salt, cover, bake 1 hour. Mix remaining ingredients and pour over and bake 30 minutes longer.

Orange Tapioca Salad

  • 1 package orange tapioca pudding
  • 1 package vanilla tapioca pudding
  • 1 can mandarin oranges
  • 1 small can pineapple tidbits
  • 1 envelope Knox gelatin
  • 3 medium bananas
Drain 1 cup juice from fruit, add 2 cup of water and cook pudding until thick. Remove from heat and stir in Knox gelatin. Beat with mixer for 3 minutes, then add fruit and chill.

Friendship Tea Mix

  • 18 ounces Tang orange powder drink
  • 1 cup Sugar
  • 1/2 cup Sweetened lemonade mix
  • 1/2 cup Instant tea
  • 3 ounces Apricot flavor Jello
  • 2 1/2 tsp. Cinnamon
  • 1 tsp. Ground cloves
  • Water, boiling
Combine all ingredients, except boiling water, in a large bowl, stirring well. Store mix in an airtight container. To serve, place 1-1/2 Tbsp. mixture in a cup. Add 1 cup boiling water. Makes about 50 servings

Country Style Ribs

  • 3-4 lb. ribs
  • 1 cup ketchup
  • 1 Tbsp. Worcestershire sauce
  • 2-3 dashes hot pepper sauce
  • 1 cup water
  • 1/4 cup vinegar
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 1 tsp. celery seed
Season ribs, place in roasting pan. Roast 30 minutes in 450 degree F oven. Lower heat to 350 degrees F. Bake 30 minutes longer. Combine remaining ingredients in pan and bring to a boil and pour over ribs. Continue baking 45 minutes. Baste every 15 minutes.

Rice Pudding

  • 2 large eggs
  • 1/2 cup sugar
  • 1/2 tsp. salt
  • 2 cups milk
  • 2 cups cooked rice,
  • 1/2 cup raisins
  • 1/2 cup chopped apples
  • 1 tsp. vanilla
  • dash nutmeg
Mix eggs, sugar and salt. Scald (cook till warm) milk, stir in egg mix. Add rice, raisins, apples and milk, mix well. Pour into 3 qt. casserole dish, sprinkle nutmeg on top. Place casserole dish into a pan of water. Place pan into oven at 350 degrees F and heat for 1hour and 15 minutes. Check with knife until insert comes out clean. Serve warm with cream or milk.

Mallow Fudge Cookies

Heat 2 squares baking chocolate and 1 cup evaporated milk until chocolate melts. Add 2 cups sugar, 1/2 tsp. salt and stir until dissolved. Cook to soft ball stage. Remove from fire and add: 1 Tbsp. butter, cool slightly and add 3 cup fine graham cracker crumbs, 24 large marshmallows, 1 tsp. vanilla and 1 cup finely chopped nuts. Mix well, press in pan, chill, 8-12 hours. Cut into squares or bars.

Rich Rolls

  • 1 cup milk
  • 1/3 cup shortening
  • 1/2 cup sugar
  • 1 1/2 tsp. salt
  • 2 packages. yeast
  • 1/4 cup warm water
  • 5 cups flour (sifted)
  • 2 beaten eggs
Bring milk to a boil, add sugar, shortening and salt. Cool till lukewarm. Sprinkle yeast over 1/2 cup warm water. After 5 minutes, stir and combine with cooled milk mixture. Add 1/2 the flour; add beaten eggs and beat well. Add remaining flour to make a soft dough and mix thoroughly. Turn out on a flour board and knead for 10 minutes. Place dough in warm, greased bowl, brush surface very lightly with melted butter. Cover and let rise for 2 hours until double in size. Turn out on board and shape into rolls. Place on greased baking sheet and let rise until double in size. Bake in oven at 375 degrees F for 15-20 minutes. This dough also makes good cinnamon rolls and cloverleaf rolls.
