Pecan Pie I
Ingredients
- 2/3 cup sugar
- Dash of salt
- 1 cup dark corn syrup
- 1 cup pecan meats
- 1/3 cup melted butter
- 3 well beaten eggs
- 1 unbaked 9 inch pie shell
Directions
Combine sugar and eggs, beating until creamy; blend in salt, corn syrup and butter. Stir in pecans. Pour into unbaked pie shell and bake in preheated oven at 350 degrees F for 50 minutes. To test for doneness, pierce center of pie with a knife. If it comes out clean, pie is done. Cool and cut. Freezes well up to 60 days.

Pecan Pie II
Ingredients
- 3 eggs, lightly beaten
- 1 cup light corn syrup
- 1/2 cup packed brown sugar
- 1/2 tsp. vanilla
- 1/4 tsp. salt
- 1 cup chopped pecans
- 1 cup semi-sweet chocolate chips
- 1 unbaked pastry shell
Directions
In a small bowl, whisk the eggs, corn syrup, brown sugar, vanilla and salt. Stir in pecans and chocolate chips. Pour into pastry shell. Cover edges with foil.
Bake at 350 degrees F for 25 minutes. Remove foil; bake 10-15 minutes longer or until a knife inserted neat the center comes out clean. Cool on a wire rack. Refrigerate leftovers.

Pecan Pie III
Ingredients
- 1 cup dark corn syrup (you can also use pancake syrup)
- 4 Tbsp. butter or margarine
- 1 tsp. vanilla
- 3/4 cup sugar
- 1/3 tsp. salt
- 1 cup pecan pieces
- 3 eggs, slightly beaten
- 1 pie shell, unbaked
Directions
Bring the syrup, butter, vanilla, sugar, salt and pecans to a boil. Let boil for 2minutes and pour the mixture slowly over the eggs, stirring vigorously, so the eggs will not cook. Pour into an unbaked pie shell and bake at 350 degrees F for 50-60 minutes.
