Recipe: Pecan Pie
Archived on 11/17/2009
Ingredients
1 cup dark corn syrup (you can also use pancake syrup)
4 Tbsp. butter or margarine
1 tsp. vanilla
3/4 cup sugar
1/3 tsp. salt
1 cup pecan pieces
3 eggs, slightly beaten
1 pie shell, unbaked
Directions
Bring the syrup, butter, vanilla, sugar, salt and pecans to a boil. Let boil for 2 minutes and pour the mixture slowly over the eggs, stirring vigorously, so the eggs will not cook. Pour into an unbaked pie shell and bake at 350 degrees F for 50-60 minutes.
Combine sugar and eggs, beating until creamy; blend in salt, corn syrup and butter. Stir in pecans. Pour into unbaked pie shell and bake in preheated oven at 350 degrees F for 50 minutes. To test for doneness, pierce center of pie with a knife. If it comes out clean, pie is done. Cool and cut. Freezes well up to 60 days.
In a small bowl, whisk the eggs, corn syrup, brown sugar, vanilla and salt. Stir in pecans and chocolate chips. Pour into pastry shell. Cover edges with foil.
Bake at 350 degrees F for 25 minutes. Remove foil; bake 10-15 minutes longer or until a knife inserted neat the center comes out clean. Cool on a wire rack. Refrigerate leftovers.
