Salmon Fritters

This recipe has been in our family for generations. It is a healthy, quick-to-make dish, using salmon as its main ingredient. It makes a delicious meal when the Salmon Fritters are served with rice and a crisp green salad. It can also be served just with a French salad for a light lunch.

Ingredients:

  • 2 (212 g.)* cans pink salmon
  • 1 slice of brown bread, crumbed
  • 1 egg
  • 10 ml (2 tsp.) vinegar
  • 30 ml (2 Tbsp.) cake flour
  • 5 ml (1 tsp.) chopped fresh parsley
  • 10 ml (2 tsp.) finely chopped onions
  • cooking oil for frying

* approx. 7.5 ounces

Directions:

In a mixing bowl, mix all the ingredients together properly.

Heat the oil in a frying pan. The oil should be approximately 1 1/2 inches deep.

Use a spoon to scoop some of the mixture onto your hand. In the palm of your hand, shape a fritter. Repeat making fritter after fritter until no more of the mixture is left.

Fry in heated oil until the fritters are golden brown. Remember to turn them, so that they will fry on both sides. Remove from oil and drain slightly to remove excess oil.

Serve immediately while still hot.
