Prune Pie

Ingredients

Crust:

  • 1 2/3 c. flour
  • 1/2 c. butter, softened
  • 1/2 c. sugar
  • 1 egg
  • pinch salt

Filling:

  • 2 1/2 c. cooked prunes
  • small carton cream
  • 3 egg yolks

Directions

Crust: With a spatula mix the sugar, egg and salt. Add flour, mixing with your fingers. Little by little, add the butter until the dough is smooth. Spread the dough in large greased pie plate. Prick with a fork and bake 10 minutes at 400 degrees F.

Filling: Arrange prunes along bottom of baked crust. Mix cream and egg yolks until well blended. Pour over prunes and bake 15 minutes more at 375 degrees F or until cream is golden.
