Easy Potato Souffle

Ingredients:

  • 5 cups hot mashed potatoes (6 med. size)
  • 3 Tbsp. margarine
  • 1/2 cup hot milk
  • 1 tsp. salt
  • 1/4 tsp. white pepper
  • Ad
  • 2 Tbsp. minced peeled onion or chives
  • 3 egg whites
  • 1/4 cup grated cheddar cheese
  • paprika

Directions:

Beat potatoes with margarine, milk, salt, pepper and onion or chives. Beat egg whites stiff and fold in. Pour into buttered baking dish, 1 1/2 quart size. Sprinkle with cheese and paprika. Bake in 475 degree F oven 10 minutes, until lightly browned. 6 servings.
