Easy Potato Souffle
- 5 cups hot mashed potatoes (6 med. size)
- 3 Tbsp. margarine
- 1/2 cup hot milk
- 1 tsp. salt
- 1/4 tsp. white pepper
- 2 Tbsp. minced peeled onion or chives
- 3 egg whites
- 1/4 cup grated cheddar cheese
Beat potatoes with margarine, milk, salt, pepper and onion or chives. Beat egg whites stiff and fold in. Pour into buttered baking dish, 1 1/2 quart size. Sprinkle with cheese and paprika. Bake in 475 degree F oven 10 minutes, until lightly browned. 6 servings.
