Leftover Chicken Casserole

Dice one large onion, 4-8 sliced peeled tomatoes, one or more cooked chicken, with skin and bones removed. I used diced potatoes but mashed would work too.

In a separate bowl, I put one cup of milk and a pint of sour cream. I diced the left over cooked chicken and added it to the mixture. I added a package of Mozzarella cheese and a package of sharp cheddar. Then I added spices, Mrs. Dash. Remember they are already leftovers and contain, enough salt. Do not add salt.

I put potatoes in a oblong cake pan. I then layered the diced onions, and tomatoes. Add the chicken mixture. Bake at 30 minutes at 375 degrees F. Done when very light brown on top.

I served with green beans and garlic buttered toast and iced tea. It fed a family of 7.

I have used broccoli as well. Any vegetable will work. Any left over meat will work as a substitute; shrimp and tuna does work, other fish does not for us. I also have used leftover meat loaf.
