Rice Cereal Breakfast

Here's a super-frugal breakfast, to be used as either a side dish or as a light main dish. The night before, cook rice in your rice cooker or cook some instant rice in the morning. Either way, combine hot rice with a little cream or milk and sprinkle with sugar or sugar alternative. My kids love it! Also try with raisins and/or brown sugar. Hope you also enjoy.

Oh how you just brought back a memory for me! My Mom would do this when I was little. She would add cinnamon and raisins, too, so it was like a rice pudding! Yum! I will definately be doing this (maybe today).

A bit of cinnamon is good with this.

Recipe: Rice Cereal

Ingredients

  • 2 cups rice, cooked (leftover rice from another meal works well for this)
  • 1/2 tsp. cinnamon
  • 2 Tbsp. sugar
  • 2 cups milk
  • 1 tsp. butter or margarine

Directions

Combine all ingredients in a saucepan. Cook on medium heat until warmed but not boiling. You can adjust the cinnamon and sugar to your taste. This can also be microwaved very easily. Serves 4.

I remember growing up and just putting sugar and milk on cold rice leftovers. This is even nicer. Raisins are a good addition too. (08/15/2006)

Hot rice with raisins, milk, sugar, and cinnamon was our lunch every Monday washday when I was a child. That was waaaaaaayyyy back when laundry was done with homemade soap, wringer washers, and hung outside. Mom worked hard, but those were wonderful days for a child. (08/15/2006)
