Sloppy Joes
Nummy Sloppy Joes
Ingredients
- 2 lb. ground beef
- 1 1/2 cup onion (chopped)
- 1 clove garlic (minced)
- 1/2 cup brown sugar
- 2 Tbsp. vinegar
- 2 Tbsp. mustard
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 cup chili sauce
- 2 cans tomato juice (8oz. size can)
Directions
Brown ground beef and onion; drain. Add remaining ingredients and simmer 10 minutes. Serve on hamburger buns.

Sloppy Joes
Combine the following in a skillet:
- two pounds of cooked beef
- 1/2 cup chopped onion
- 1 cup chopped celery
- 1 (10.75-ounce) can condensed tomato soup
- 1/4 cup ketchup
- 1 tablespoon white vinegar
- 1/4 cup packed brown sugar
- 1-1/2 teaspoons Worcestershire sauce
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder.
Place ground beef in a large nonstick skillet over medium heat. Add onion and celery, cover the pan and cook over medium heat until beef is thawed and onions and celery are tender, about 5 minutes. Stir in the tomato soup (undiluted), ketchup, vinegar, brown sugar and Worcestershire sauce into the beef mixture. Season with salt and garlic powder. Simmer over low heat until thoroughly heated, stirring frequently. Spoon the hot beef mixture onto hamburger buns, which may be toasted first. Serves 8.

Peppermint Punch
Ingredients
- 3/4 cup Grapefruit diet soda
- 1 drop red food coloring
- 1 Tbsp. vanilla frozen yogurt
- 1/2 of 1 round peppermint candy, crushed
Directions
Pour the soda into a small glass and stir in food coloring. Top with the frozen yogurt and sprinkle the candy on top upon serving.
Serves: 1 Prep. time: 5 minutes. Diabetic Exchange: Free Food. Calories: 17, Cholesterol: 1 mg, Sodium: 14 mg, Carb: 3 g, Dietary Fiber: 0 g, Sugars: 3 g., Protein: 1 g, Serving size: 3/4 c.

Stuffed Burger Bundles
Ingredients
- 1 cup stuffing mix
- 1/2 cup evaporated milk
- 1 lb. ground beef
- 1 can cream of mushroom soup
- 2 tsp. Worcestershire sauce
- 1 Tbsp. ketchup
Directions
Prepare stuffing mix and set aside. Combine milk and ground beef. Divide into 4 patties and press into 5 inch circles on waxed paper. Put in 1/4 c. stuffing in center of each patty. Fold up and seal around the stuffing.. Place in 1 1/2 qt. baking dish. Combine remaining ingredients and heat. Pour over meatballs and bake, uncovered, for 45 minutes at 350 degrees.

Cinnamon Fried Ice Cream
Ingredients
- 3 cups cinnamon toast crunch cereal, crushed
- 6 scoops vanilla ice cream (about 1/2 cup each)
- Whipped topping (optional)
- Maraschino Cherry (optional)
Directions
Place cereal in a shallow pan.
Quickly roll 1 scoop ice cream at a time in cereal to coat. Place coated scoops of ice cream in jelly roll pan. Cover and freeze about 2 hours or until firm.
Set oven to broil.
Uncover pan, broil ice cream with tops 6 inches from heat for about 30 seconds or until coating is light brown.
Good with whipped topping and a cherry.

Waikiki Meatballs
Ingredients
Meatballs:
- 1 1/2 lb. ground beef
- 1/2 cup cracker crumbs
- 1/3 cup onion (minced)
- 1 egg (unbeaten)
- 1 1/4 tsp. salt
- 1/4 tsp. ginger
- 1/4 cup milk
Sauce:
- 2 Tbsp. cornstarch
- 1/2 cup brown sugar
- 1 can pineapple tidbits (includes juice)
- 1/3 cup vinegar
- 1 Tbsp. soy sauce
- 1/2 cup green pepper (chopped)
Directions
Mix together all meatball ingredients. Shape into small meatballs. Melt 1 Tbsp. shortening and brown meatballs until cooked. Remove from skillet and pour off fat.
Make sauce of cornstarch and brown sugar. Stir in juice from can of pineapple tidbits (juice only), vinegar and soy sauce. Pour sauce into a skillet and cook on medium heat, stirring constantly until thickened. Add meatballs and pineapple tidbits and heat thoroughly. Lastly, add chopped green pepper so it will be crunchy. Serve with rice or alone.

Double Decker Hamburger
Ingredients
- 1 lb. ground beef
- 1 Tbsp. dried onion
- 1 small egg
- 1/2 tsp. salt
- Pepper (to taste)
- 1 Tbsp. flour
Directions
Mix together well. Make 6 thin patties. On 3 patties, put a filling of cheese cubes, chopped mushrooms, and fresh onions if desired. Place second patty on top and seal together. Broil 6 to 7 minutes on each side until done. Serve on buns.
