Meat Loaf "Pie" with Ricotta Filling

A change of pace from traditional meat loaf, and very good.

Ingredients:

  • 1 1/2 lbs. ground turkey or lean beef
  • 3/4 cup quick cooking oats
  • 1 cup finely chopped canned tomatoes
  • 1/4 cup minced shallots
  • 2 eggs
  • 2 Tbsp. freshly grated Romano cheese
  • 1 1/2 tsp. Italian seasoning
  • 1 cup ricotta cheese
  • dash nutmeg

Directions:

Mix the ground meat, oats, 1/2 cup of the tomatoes, shallots, 1 egg, cheese, 1 tsp. of the Italian seasoning, and pepper to taste. Pat half the mixture into a 10 inch glass pie plate.

Mix the remaining egg with the ricotta cheese and nutmeg. Spoon this over the meat.

On waxed paper, pat the remaining meat into a round layer about the same size as the pan. Use the waxed paper to flip the meat layer on top of the ricotta. Spread the remaining tomatoes on top and sprinkle with the 1/2 tsp. Italian seasoning.

Bake in a 350 degree F oven for 40 minutes, or until cooked through and the ricotta layer is set. Cut into wedges to serve.

I tried this recipe and it absolutely needs to cook longer than 40 minutes! Probably more like and hour and 10 minutes!
