Pumpkin and Banana Bread

Ingredients

  • 2 cups sugar
  • 2/3 cup cooking oil
  • 4 eggs
  • 3-1/3 cups all-purpose flour
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 2/3 cup water
  • 1 - 15 oz. can pureed pumpkin
  • 1 ripe banana, smashed
  • 3/4 cup chopped pecans

Directions

Grease the bottom and 1/2 inch up sides of two 9x5x3 inch loaf pans; set aside. In a very large bowl beat sugar and oil with mixer on medium speed until well combined. Add eggs, one at a time, beating after each addition.

In a large bowl, combine flour, baking soda, baking powder, cinnamon and nutmeg. Stir to blend. Alternately add flour mixture and water to sugar mixture, beating after each addition just till combined. Beat in pumpkin and banana. Sir in pecans. Spoon mixture into prepared pans. Let set a minute and then take a table knife and cut through the batter to release air bubbles.

Bake in 350 degree F oven for 50 minutes or until center is done when tested with a toothpick.
