Broccoli-Lima Bean Casserole
- 3 Tbsp. butter
- 1/4-1/2 tsp. curry powder
- 2-3 cup Rice Chex cereal
- 1 package frozen broccoli
- 1 package frozen lima beans
- 1 can cream of mushroom soup
- 1 can cream of celery soup
Melt butter, add curry powder and Rice Chex. Stir over low heat for 5 minutes. Cook frozen vegetables according to package directions and drain. Add the soups to the lima beans; add 1 1/2 cup Rice Chex, then add broccoli. Put remaining Rice Chex on the top. Put into a 2 qt. casserole and bake 30 minutes at 350. Serves 8 or 9.
Note: Baby lima beans are best.
