- 1 medium onion, chopped
- 1 tsp. vegetable oil
- 1 can cream of mushroom soup
- 1 can cream of celery soup
- 1 can V-8 juice (32oz.)
- 1 pkg. frozen veggies
- salt and pepper, to taste
Saute onion in oil in saucepan until transparent. Add soups and juice. Bring to a boil. Add frozen vegetables. Simmer until veggies are tender. Add salt and pepper. May add ground beef, chicken or turkey if desired. 12 servings.
