Sugar Free Frosting

Is there a cake frosting with little or no sugar? Our school has just banned any snack that is more than 50% sugar. The moms are struggling with what to send on birthdays -- any suggestions? I'm not fond of sugar substitutes.

Yum Yum Salad

Ingredients

  • 2 cups crushed pineapple
  • 1 cup grated cheese
  • 1/2 cup cold water
  • juice of 1 lemon
  • 1/2 cup sugar
  • 2 Tablespoons gelatin
  • 1 cup cream (whipped)
  • 1/2 cup nut meats

Directions

Heat pineapple and lemon juice and sugar to the point where it will be hot enough to dissolve the gelatin that has been soaked in a small amount of cold water. Let the mixture cool, when it begins to set, add cheese, chopped nuts and whipped cream. Serve on lettuce leaf.

Brunch Casserole

Ingredients

  • 1 lb. bulk sausage, cooked and drained
  • 1 (8 oz.) can crescent dinner rolls
  • 2 cups shredded cheddar cheese
  • 4 eggs, beaten
  • 3/4 cup milk
  • 1/4 tsp. each salt and pepper

Directions

Line a greased (or sprayed) 9x13 inch dish with crescent rolls. Press edges together to seal. Sprinkle with sausage and cheese. Combine remaining ingredients and beat well. Pour over sausage and cheese. Bake uncovered at 425 degrees F for 15 minutes. Let stand five minutes and cut into squares. Makes 6-8 svgs.

Red Cabbage with Pork and Apples

Ingredients

  • 1 Tbsp. oil
  • 1 med onion sliced
  • 4 thick sliced pork chops
  • 1 (2 lb) red cabbage shredded
  • 2 chicken bouillon cubes (dissolved in 1 c.hot water)
  • 2 small apples (peeled, cored, and cubed)
  • 2 Tbsp. vinegar
  • 1/2 tsp. caraway seed
  • 1/4 cups + 2 tbsp sugar
  • 3/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 1/2 lbs. potatoes (peeled and sliced 1/2 in. thick.) cooked

Directions

Heat oil, add onion and saute 3 minutes. Add pork, saute 2 minutes. Add cabbage, saute 7 minutes. Add remainder except potatoes. Cover simmering for 30 minutes (stirring occasionally). Place potatoes on plate and cover with pork mixture.

Super Simple Chocolate Cookie

One bowl. No beating. Just mix and bake!

On a busy day, you need a quick and simple cookie recipe. This is as simple as it gets: melt the butter in the microwave, stir in the ingredients, and bake. They're good and loaded with oatmeal that makes them chewy and wholesome.

Ingredients

  • 1/2 cup butter
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 teaspoon vanilla
  • 2 large eggs
  • 3 cups quick rolled oats
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Directions

Preheat the oven to 350 degrees F. Grease two baking sheets. In a large bowl, melt the butter in the microwave. Add the sugar and stir. Add the eggs and stir until smooth. Add the oats, flour, baking powder, baking soda, and salt. With a large, sturdy spoon stir in the ingredients, adding the chocolate chips, part way through stirring. Form golf ball sized mounds on the baking sheet. Bake for 8 to 10 minutes or until the edges of the cookies just start to brown. Remove from the oven, let sit for two minutes, and then remove the cookies to wire racks to cool.

Note: The dough will become stiffer as it cools. If it is too stiff, instead of scooping mounds of dough with a spoon, use your hands to make loose balls.

Mud Hens

Ingredients

  • 1 stick margarine
  • 1 cup white sugar
  • 3 egg yolks
  • 1 tsp. soda
  • 1 tsp. vanilla
  • 1 1/2 cups flour

Directions

Mix together and pat into a 9x13 inch pan. Sprinkle with one cup nuts or chocolate chips. Beat the egg whites stiff and 1 cup brown sugar and spread on top. Bake at 350 degrees F (preheated) for 35 minutes.

Mandarin Pudding Tapioca

Ingredients

  • 1 small box cook-type vanilla pudding
  • 1 small box cook-type vanilla tapioca pudding
  • 1 small box cook-type orange pudding
  • 2 cups whipped topping
  • 1 can mandarin oranges or crushed pineapple

Directions

Take the juice of the mandarins or pineapple and add water until you have 3 cups. Add the puddings and cook until thick. Cool. Add whipped topping and mandarins or pineapple.

Ham and Potato Puffs

Ingredients

  • 3 cups mashed potatoes
  • 1-2 cups chopped ham
  • 2 eggs
  • parsley
  • seasonings to taste

Directions

Reserve 1 egg white and mix remainder of ingredients together. Form into balls. Brush with beaten egg white and roll in flour. Bake at 350 degrees F until brown or fry in deep fat. A good way to use up leftover ham and mashed potatoes!

Homemade Southern Red Beans and Rice, Mary's Favorite

Ingredients

  • 1 pound of dried, Camellia brand red kidney beans
  • 1 stick real, unsalted butter*
  • 1 large onion, chopped
  • 1 green bell pepper, chopped**
  • 2 stalks celery, chopped
  • 2 toes of garlic, minced
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper
  • 1 teaspoon dried basil
  • 2 bay leaves
  • about 1-1/2 quarts of water
  • 1 package (14 oz.) Hillshire Farms beef smoked sausage
  • Salt to taste if needed - BUT ONLY AT THE END!
  • Hot, cooked rice

Directions

Rinse and sort beans and place into a deep pot, adding water to cover beans plus about an inch or so. Do not add any seasonings or salt! Bring to a boil and boil for 5 minutes uncovered, turn off heat, cover and let soak for one hour.

Meanwhile chop all of your veggies. Melt butter in a skillet; add onion, bell pepper, and celery and saute until tender. Meanwhile, slice sausage into about 1/4-inch rounds. Toss the garlic, black and red pepper and basil into the vegetable mixture and let seasoning meld with the veggies for a few minutes, stirring.

Drain and rinse beans and put them back into pot; add about 1-1/2 quarts of fresh water. Dump entire contents of veggie skillet into pot of beans, toss in the bay leaves and bring to a boil, then reduce heat to a simmer.

Meanwhile, put about a teaspoon of olive oil into the same pan you used to saute the veggies, and heat over medium high heat. Toss in the sliced sausage and cook until nicely browned, about 15 minutes.

Dump into beans. Simmer beans for about 1-1/2 to 2 hours, uncovered, or until tender and nicely thickened. Taste and add salt if needed. Do not add salt until the beans are done! Salt tends to both toughen the beans and also makes them take longer to cook. Scoop beans over hot, cooked rice and serve with hot buttered rolls or better yet, a big slice of hot buttered cornbread. Yum!

*Yes, that is a whole stick! This isn't a low fat recipe. The butter adds richness to the beans and makes them very creamy and just super delish. You can try to do without it, but I just can't recommend it. :)

**I usually have a mix of green, yellow and red bell peppers that I slice and freeze, so I often use this mix instead of the fresh green bell pepper. Either way the bell pepper is key to the flavor so don't skip this veggie!

Taco Rice Casserole

Ingredients

  • 1 1/2 cups rice
  • 1 1/2 lb. ground beef
  • 1 package taco seasoning
  • 1 qt. pizza sauce
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1/4 cup chopped onion
  • 1 cup shredded cheddar cheese

Directions

Heat oven to 350 degrees F. Ad cake pan works well. Cook rice in 3 cup water. Cook ground beef until browned; mix taco seasoning with meat. Mix together sour cream, mayonnaise, onion and cheese. Put in layers; rice, pizza sauce, meat and top with sour cream mixture. Bake 25 minutes or until cheese is melted.

My Daughter's Favorite Hot Dish

Ingredients

  • 1-1/2 lbs. ground beef
  • 1 package medium egg noodles
  • 1 can whole kernel corn
  • 1 large can (family size) cream of mushroom soup

Directions

Brown ground beef and season with salt and pepper. Cook noodles according to package instructions. Drain corn and add to ground beef then stir in soup and noodles and heat through
