Peanut Butter Roll Candy

Does anyone have a peanut butter roll candy recipe to share? I think it is made with confectioners sugar and milk, then rolled out and peanut butter spread on top. Roll and then cut into slices.

No Cream Creamy Broccoli Soup

Ingredients

  • 2 medium carrots, peeled, chopped
  • 1 medium onion, chopped
  • 2 celery stalks, chopped
  • 3 Tbsp. oil
  • 2 cans chicken broth
  • 2 cups water
  • 2 small bunches fresh broccoli, trimmed, cut in 3 inch lengths
  • 1/2 cup Minute Maid rice uncooked
  • 2 cups milk
  • 1/4 cup grated Parmesan cheese

Directions

Cook and stir carrots, onion and celery in hot oil in large saucepot on medium high heat 3 minutes. Add chicken broth and water; stir. Bring to boil.. Stir in broccoli and rice. Reduce heat to medium low; simmer, 10-15 minutes or until vegetables are tender; stirring frequently.

Add soup in batches, to blender or food processor container; cover. Blend until pureed. Return soup puree to pot. Add milk and cheese, cook until heated through, stirring occasionally.

Apple Kuchen (Cake Mix Recipe)

Ingredients

  • 1/2 cup butter, softened
  • 1 package yellow cake mix
  • 1/2 cup coconut
  • 2 1/2 cups apples, pared and sliced
  • 1/2 cup sugar or sweetener
  • 1 tsp. cinnamon
  • 1 cup sour cream
  • 2 egg yolks, beaten

Directions

Heat oven to 350 degrees F. Cut butter into dry cake mix till crumbly. Mix in coconut. Pat mixture lightly into ungreased 9 inch x 13 inch cake pan, building up slight edges. Bake 10 minutes. Remove from oven. Arrange apple slices on warm crust. Mix sugar/sweetener and cinnamon. Sprinkle over apples.. Blend sour cream and egg yolks. Drizzle over apples. Bake 25 minutes or till edges are light brown. Serve warm. Serves: 12

Banana Muffins

Ingredients

  • 2 cups Bisquick baking mix
  • 1/4 tsp. baking soda
  • 2/3 cup sugar or sweetener
  • 2 eggs, beaten
  • 3 bananas, ripe and mashed

Directions

Mix thoroughly all ingredients. Bake at 350 degrees till they test clean. Makes 1 1/2 doz. muffins.

Perfect Winter Beef Stew

Ingredients

  • 3/4 cup Italian dressing
  • 2 lb. beef for stew
  • 6 slices bacon, chopped
  • 1 large onion, chopped
  • 3 cups sliced mushrooms
  • 3 cups sliced carrots
  • 3 medium potatoes, peeled, cut into large chunks
  • 1 can stewed tomatoes, undrained
  • 1 can beef broth

Directions

Trim excess fat from meat and cut into even 1 inch chunks using a sharp knife. Place dressing and beef in large resealable plastic bag. Refrigerate 30 minutes to marinate.

Cook bacon in large pot on medium 5 minutes or until crisp. Remove bacon from pot using slotted spoon. Drain excess bacon fat carefully into a tin can, rather than pouring down sink. Place can in fridge until fat has solidified before discarding.

Add onion and mushrooms to pot; cook on medium-high 10 minutes or until softened. Remove beef from marinade; discard marinade. Add beef, carrots, potatoes, tomatoes with their liquid, broth and bacon to pot. Bring to boil, stirring occasionally.

Reduce heat to low; cover and simmer 1 hour 15 minutes. Uncover; continue to simmer 15 minutes or until meat is tender and sauce is thickened, stirring occasionally.

Powerhouse Salad

Ingredients

  • 2 cups torn mixed salad greens
  • 1/4 cup small broccoli florets
  • 1/4 cup red pepper strips
  • 1/4 cup cherry tomatoes
  • 2 Tbsp. shredded carrot
  • 1 Tbsp. slivered almonds
  • 2 Tbsp. Ranch dressing (can use low-fat, if desired)

Directions

Place all ingredients, except dressing, on large serving plate. Drizzle with dressing just before serving. Makes 1 serving.

Apple Caramel Sundae Tart

Ingredients

  • 35 caramels, unwrapped
  • 3 Tbsp. milk
  • 1 graham cracker pie crust
  • 1 cup pecans, chopped
  • 1 cup milk
  • 1 package instant vanilla pudding
  • 1/2 of 8 oz. tub of Cool Whip, thawed
  • 1 can apple pie filling

Directions

Place caramels and 3 Tbsp. milk in medium microwaveable bowl. Microwave on high 1 min. or until caramels are melted; stir to smooth. Reserve 1/3 cup caramel mixture. Pour remaining caramel mixture into pie crust; top with pecans.

Pour one cup milk into large bowl. Add dry pudding mix. Beat with wire whisk 2 minutes. Gently stir in whipped topping. Spoon into crust.

Freeze 4 hours or overnight. Spoon pie filling over pudding mixture. Warm remaining caramel mixture in microwaveable bowl 30 seconds on high or until caramel is smooth. Drizzle over apple pie filling. Serve immediately. Makes 10 servings.

Baked Monte Cristo Sandwich

Ingredients

  • 8 slices whole wheat bread
  • 4 slices cheese
  • 24 slices shaved smoked ham
  • 2 egg whites
  • 1/2 cup fat free milk

Directions

Preheat oven to 450 degrees F. Top 4 of the bread slices with cheese slices, ham and remaining bread slices. Beat egg whites and milk in shallow dish or pie plate. Dip each sandwith into egg mixture, turning to coat both sides. Place sandwiches on baking sheet sprayed with cooking spray. Bake 6 minutes, turn. Bake an additional 5 minutes or until sandwiches are golden brown. Cut sandwiches diagonally in half. Makes 4 servings.
