Spinach And Chicken Pasta

Browned chicken with fresh tomatoes and spinach makes this very easy. It also combines your meat, vegetable, and pasta with cheese. It's easy, quick and delicious.



  • 1 lb. cooked, browned Chicken Breast, cut up
  • 1 box frozen spinach
  • 1-2 cups tomatoes (preferably fresh)
  • 3/4 - 1 lb. uncooked pasta of your choice
  • 2 Tbsp. minced garlic
  • a little Salt
  • a little Pepper
  • 1 Tbsp. margarine or butter
  • Parmesan cheese
  • 1/4 cup white wine for cooking (optional)


Cook chicken until no pink shows (lightly browned) and cut up into 1/2 inch to 1 inch pieces. Boil pasta as directed on package, drain, and set aside.

Chop tomatoes into desired size. Brown garlic and tomatoes with salt and pepper in butter for 5 minutes. Then add spinach, chicken, and tomatoes. Stir lightly. If this seem dry, simply add 1 Tbsp olive oil. Add white wine and pasta. Simmer for approximately 15 minutes. You may cover, however it's not necessary.

Last, top with shredded Parmesan cheese and serve with a simple salad and garlic bread. darlene
