Cucumber Cottage Cheese Dip

Ingredients

  • 1 small onion, minced
  • 1/2 cucumber, seeded, minced
  • 1 Tbsp. lemon juice
  • 1 hard cooked egg, quartered
  • 1 1/2 cups 2 percent cottage cheese
  • 2 oz. Blue or Roquefort cheese
  • Salt and pepper to taste

Directions

Blend onion, cucumber, lemon juice and egg in blender. Add cheeses, blend 3 seconds. Season.

Extremely good.

I have used this dip with chips, salted crackers such as triscuits, vegetable thins, ritz crackers etc. I have never had it on a bagel but it might be delicious too. I will try it. Thanks for the idea.
