Peanut Butter Stew


  • 1/2 cup peanut butter
  • 1 lb. beef cubes
  • 2 medium onions, chopped
  • 2 tomatoes, quartered
  • 1/4 cup tomato paste
  • Ad
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • cayenne pepper, to taste
  • mushrooms (optional)
  • hot cooked rice


Combine peanut butter with enough water to make smooth paste in large saucepan. Add beef, onions, tomatoes, tomato paste, salt, pepper, and cayenne pepper; mix well. Add water to achieve desired consistency. Cook over medium heat for 1 hour. Add mushrooms. Cook for 1 hour to desired degree of doneness. Thicker soup can be served over rice.
