Spinach Squares

Ingredients
  • 1/2 cup butter
  • 3 eggs
  • 1 cup milk
  • 1 cup flour
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1 lb. Monterey Jack cheese (grated)
  • 4 cups fresh spinach (chopped)

Directions

Melt butter in 9x13 inch pan while heating oven to 350 degrees F. In mixing bowl, beat eggs; beat in milk and dry ingredients. Stir in cheese and spinach. Spread in pan and bake 35 minutes. Cool about 20 minutes, then cut into 1 1/2 inch squares to use as appetizer or 4 inch squares for luncheon dish. Serve at room temperature.

Savory Spinach Squares

Not fond of spinach, but this recipe is the exception to that rule for me.

Ingredients:

  • 2 (10 oz.) pkgs. frozen spinach
  • 2 cups cooked rice
  • 2 cups shredded American cheese
  • 4 eggs
  • 2/3 cup milk
  • 1/4 cup melted butter or margarine
  • 1/2 cup chopped onion
  • 2 Tbsp. parsley
  • 1 tsp. Worcestershire sauce
  • 1 1/2 tsp. salt
  • 1/2 tsp. thyme
  • 1/2 tsp. nutmeg

Directions:

Cook spinach and drain. Cook rice. Shred cheese; beat eggs. Add milk, butter, and seasonings. Add spinach, rice, and cheese. Blend well. Pour into greased shallow 2 qt. baking dish. Bake at 350 degrees F for 45 minutes. Cut in squares. (Broccoli or zucchini squash can be used in place of spinach.)

Cooking Time: 45 Minutes
