Depression Jelly Recipe

My mother died about a month ago and my dad has been talking about jelly mom made during the depression that had no fruit, tomatoes or figs but just a clear red strawberry flavored jelly. Can anyone help me with a recipe you might have? I'd love to make it for him. I'll appreciate any advice or help.

Amish Friendship Sweet Bread

Does anyone out there have the ingredients to "START" the Amish Friendship Sweet Bread? Or you may know it as "Herman the Cake". I remember it from the early 1980's. It was a fun thing to have and share. I would also like the directions also, but will be happy for just the starting point.

Waffle Iron Cookies

Ingredients

  • 1 1/2 cup sugar
  • 1 cup butter or margarine
  • 4 whole eggs
  • vanilla
  • 2 cups flour
  • 1/2 cup cocoa
  • salt

Directions

Mix all together and bake in waffle iron on medium for 2 minutes. Watch carefully. (Drop by teaspoonfuls)

Frosting:

  • 1/2 cup brown sugar
  • 3 Tbsp. water
  • 1 cup powdered sugar
  • 1 sq. chocolate
  • 1 tsp. vanilla
  • 2 tsp. butter or margarine

Boil together to dissolve - then add powdered sugar, vanilla and butter. This should make a thin consistency.

Oyster Dressing

Ingredients

  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1/4 cup butter

Directions

Place all 3 ingredients in a skillet and cook until tender.

Ingredients

  • 6 cups bread crumbs
  • 3 cups chopped oysters - I use canned oysters
  • 1 bay leaf
  • salt and pepper
  • 1 tsp. poultry seasoning
  • 2 beaten eggs
  • 1 3/4 cups milk and oyster liquid

Directions

Add the first mixture to this mixture. Remove bay leaf and bake 1 hour at 350 degrees F.

No Peek Roast

Ingredients

  • 3 lbs. chuck or 7 bone roast
  • 1 pkg. onion soup mix
  • 1 can cream of mushroom soup
  • 1 soup can red wine

Directions

Put roast in heavy pot. Pour ingredients over roast. Cover tightly and DON'T peek. Cook at 325 degrees F oven for 3 hours.

Christi's Tater Tot Casserole

I took a recipe and changed everything we didn't like and added other stuff so it doesn't resemble the original recipe much, but my husband and teenage son love it.

Ingredients

  • 2 lb bag of frozen tater tots
  • 2/3 can of the big can of cream of chicken
  • 1 1/2 cups of sour cream
  • Two handfuls of shredded cheddar
  • 1/2 cup onions
  • six pieces cut up ham lunchmeat
  • six pieces cut up cooked bacon

Directions

Preheat oven to 350 degrees F. Mix all ingredients together in big bowl. Pour into greases 9x13 inch pan. Cook for 1 hour. Last five minutes sprinkle more cheese on top, put back in for last five minutes till all melty.

Freezer Jam with Jello

Stir together:

Ingredients

  • 3 cups sugar
  • 4 cups strawberries

Directions

Let stand until sugar dissolves. Boil over medium heat for 10 minutes. Remove from heat. Stir in 1-3oz. box of strawberry Jello. Stir until Jello dissolves.

Cool. Pour into containers and freeze until ready to use. After thawing, store in fridge.

Macaroni Chicken Casserole

Ingredients

  • 2 cups chicken, cooked and chopped
  • 2 cups macaroni, uncooked
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 2 cups milk
  • 1 onion, chopped fine
  • 1/4 lb. Velveeta or American cheese
  • salt and pepper, to taste

Directions

Mix together and put in 9x13 inch pan. Let stand overnight. Bake 350 degrees F for 1 hour.

Our Family Cinnamon Coffee Cake

Ingredients

  • 1 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 1/4 cup milk
  • 3 cups flour
  • 3 tsp. baking powder
  • 1/2 tsp. salt
Filling:
  • 1/2 cup margarine or butter, softened
  • 1 cup brown sugar
  • 2 tsp. cinnamon
  • 1/2 cup nuts

Directions

Cream shortening, sugar and eggs until light and fluffy. Add vanilla to milk. Mix batter alternating dry ingredients and milk, vanilla mixture until light and fluffy. Pour half of batter into greased and floured 9x13 pan.. Then add 1/2 filling mixture. Add other half of batter and top with the rest of filling. Bake 20-25 minutes at 350 degrees F.

Dream Bars

Dream Bars I

Crust:

  • 1/2 cup butter (softened)
  • 1 cup flour
  • 1/2 cup brown sugar

Directions:

Mix ingredients to a crumbly mass. Pat into a pan. Bake 10 minutes in moderate oven.

Egg Mixture:

  • 2 eggs (well beaten)
  • 1/2 tsp. baking powder
  • 1/2 tsp. vanilla
  • 1/4 cup flour
  • 1 1/2 cup brown sugar

Directions:

Beat eggs until lemon colored. Add rest of ingredients. After taking crust from oven, place 1 small pkg. chocolate chips over crust. Also sprinkle 3/4 cup shredded coconut. Pour egg mixture over top and bake 30 minutes. Cut while warm.

Dream Bars II

Crust:

Melt 1 stick butter or margarine in bottom of 9x13 inch pan. Sprinkle 1 1/2 cups graham cracker crumbs. Pat out smooth in pan. This forms the crust.

Sprinkle the following over the crust:

  • 1 cup coconut
  • 1 package chocolate chips
  • 1 cup nut meats
  • 1 package butterscotch chips

Drizzle 1 can condensed milk over this. Bake at 350 degrees F for 20 to 30 minutes. Cool and cut in squares.

Alternate crust:

  • 1 cup unsifted flour
  • 1 cup quick cooking oats
  • 3/4 cup firmly packed brown sugar
  • 1/2 cup butter (softened)

Mix together and pat into 9x13 inch pan.

Chili Casserole

The following is a tasty and easy skillet casserole my family enjoys:

Ingredients

  • 1 lb ground chuck
  • 1/2 cup chopped onion
  • 1 can (15 1/2 oz) kidney beans, rinsed and drained
  • 1 can (15 oz) tomato sauce
  • 1 can (14 1/2 oz) stewed tomatoes
  • 1/4 tsp. garlic powder
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 2 cups cooked noodles (1 1/4 cups uncooked will yield 2 cups cooked. I like bowties)

Directions

In a large skillet, brown beef and onion; drain. Stir in beans, tomato sauce, tomatoes, garlic powder, salt and pepper. Cover and simmer for 5 minutes. Stir in cooked noodles; heat through. Serves 6

Double Chocolate Crumble Bars

Ingredients

  • 1/2 cup margarine
  • 3/4 cup sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 3/4 cup flour
  • 2 Tbsp. cocoa
  • 1/4 tsp. baking powder
  • 1/2 cup nuts
  • 2 cups miniature marshmallows
  • 1 package chocolate chips
  • 1 cup peanut butter
  • 1 1/2 cup crispy rice cereal

Directions

Cream together margarine and sugar. Add eggs, vanilla, mixing well. Add flour, cocoa, baking powder, and nuts. Spread in 9x13 pan. Bake at 350 degrees F for 15 minutes. Remove from oven and sprinkle marshmallows on top and return to the oven for 3 minutes. In large pan melt chocolate chips with peanut butter, add crispy rice cereal and spread on top of baked mixture. Refrigerate or put in cool place to set. Cut into bars.
