Cranberry Nut Bread

Ingredients:

  • 1 cup halved cranberries
  • 3/4 cup sugar
  • 2 cup flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1/2 cup chopped walnuts
  • 1 tsp. grated orange rind
  • 3/4 cup orange juice
  • 1 egg, beaten
  • 2 Tbsp. vegetable oil

Directions:

Mix together all dry ingredients. Combine egg, orange rind, orange juice and oil. Add to dry ingredients until moistened. Fold in cranberries and walnuts. Bake in greased 9x5 inch loaf pan. Bake at 350 degrees F for about 50 minutes. Cool on wire rack.

Tip: Cranberry Nut Bread

Ingredients:

  • 2 cups flour
  • 1 cup sugar
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 3/4 cup orange juice
  • 1 Tbsp. grated orange peel
  • 2 Tbsp. shortening
  • 1 egg, well beaten
  • 1 (6 oz) package sweetened dried cranberries

Directions:

Heat oven to 350 degrees F. Grease a 9x5 inch loaf pan. Mix together flour, sugar, baking powder, salt, and baking soda. Stir in orange juice, orange peel, shortening and egg. Mix until well blended. Stir in cranberries. Spread evenly in loaf pan. Bake for 55 minutes or until toothpick inserted in middle comes out clean. Cool on rack for 15 minutes before removing from pan.

Cool completely. Wrap and store overnight.
