Hamburger Taco Soup

I love Mexican foods but dislike soup using chicken. The weather got cold here so I decided to make tacos in soup form.

Ingredients:

  • 1/2 lb. ground beef
  • 1 small onion, chopped
  • 1/2 bell pepper, chopped
  • 1 stalk celery, chopped
  • 3 toes garlic, minced
  • 2 Tbsp. tomato paste
  • 1 can Rotel Tomatoes
  • V-8 Juice
  • 1 can refried beans
  • Chile power, to taste
  • Cumin, to taste
  • Crushed hot pepper
  • Salt

Directions:

Wash and chop vegetables. Set aside. In a large pot, brown ground beef adding onion, bell pepper and celery after the meat is browned and broken into small pieces. Saute vegetables along with the meat until limp. Add the garlic and tomato paste and cook about 5 minutes. Add the can of Rotel tomatoes, V-8 juice, refried beans, chili powder, cumin, hot pepper and salt. Cover and cook on lowest fire until thickened. Taste and adjust seasonings as needed.

Serve hot. Serve with Doritos, diced raw onions and grated cheddar cheese.

Recipe: Hamburger Taco Soup

Ingredients

  • 1 1/4 lbs. hamburger
  • 1/2 cup onion, chopped
  • 1 package taco seasoning
  • 1 can corn, do not drain (16oz.)
  • 1 can red beans, drained (16oz.)
  • 1 can tomato sauce (16oz.)
  • 1 can tomatoes, diced (16oz.)
  • cheddar cheese, shredded (to taste)
  • 1 bag Frito chips

Directions

Brown the hamburger and onion together. Simmer and stir in the taco seasoning, corn (with the liquid), red beans and tomato sauce. Top with shredded cheddar cheese and serve with Frito chips.
