Memere's Vermicelli Soup

Ingredients

  • 1 lb butter
  • 1 box vermicelli
  • 2 cans stewed tomatoes
  • 1 tsp. garlic powder
  • 1 tsp. onion powder

Directions

Cook vermicelli according to instructions along with butter. Drain and add tomatoes and spices.

Mary's Favorite Ground Beef Casserole

Ingredients

  • 1/4 cup butter
  • 3 stalks of celery, chopped
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 1 toe of garlic, minced
  • 1 pound ground chuck
  • 1/4 teaspoon dried basil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 can (6 oz.) tomato paste
  • 1 cup water
  • 1 bay leaf
  • 1/2 pound large elbow macaroni, cooked and drained
  • 1-1/2 cups fresh bread crumbs (about 4 slices), ground fine
  • 1 cup shredded cheddar cheese
  • Couple sprinkles of dried parsley
  • Couple sprinkles of Parmesan cheese

Directions

Put on a pot of water for the macaroni and bring to a boil, add macaroni and cook according to the package direction. Meanwhile, melt the butter in a skillet. Chop the celery, onion and green bell pepper; toss into the melted butter as you go and saute the vegetables until tender. Push veggies to the sides of the skillet, toss the garlic in the center and saute for a few seconds, then toss the ground beef on top, cook and stir until the meat is browned.

Meanwhile preheat oven to 350 degrees F. Push the veggies into the meat and stir to mix thoroughly. Drain off fat if needed and return meat mixture to the skillet. Add basil, salt, pepper and stir into meat and veggie mixture for a few minutes to meld flavors together. Add tomato paste, water, and bay leaf, stir together well and simmer, uncovered for about 5 minutes.

Remove bay leaf and discard. Spray a 13 x 9 inch glass casserole dish with butter flavored PAM, toss in cooked macaroni. Spoon the meat and veggie mixture evenly on top of the macaroni, covering macaroni completely. Sprinkle cheese on top of the meat mixture and bread crumbs on top of cheese. Add a few sprinkles of dried parsley and Parmesan on top.

Bake, uncovered for about 20 minutes or until cheese is melted.

Coconut Pound Cake

Ingredients

  • 1 cup shortening
  • 2 cups flour
  • 1/2 cup milk
  • 1/2 tsp. salt
  • 5 eggs
  • 2 cups sugar
  • 1 cup coconut
  • 1 1/2 tsp. baking powder
  • 1 tsp. coconut flavoring

Directions

Cream shortening and sugar, then add unbeaten eggs, 1 at a time. Add flavoring. Mix flour, salt and baking powder alternately with milk to shortening and sugar mixture. Add coconut. Bake in bundt or tube pan that has been well greased and flour at 325 degrees F. for 1 hour.

Then mix:

  • 1 cup sugar
  • 1/2 cup water
  • 1 tsp. coconut flavoring

Bring to a boil for 1 minute. Pour this over cake after it has baked. Let stay in pan 25 minutes until cake has cooled. This cake stays very moist.

Frightfully Easy Ghost Cookies

Ingredients

  • 12 oz vanilla flavored candy coating, cut into pieces
  • 1 (1 lb) package nutter butter peanut butter filled cookies
  • 64 miniature chocolate chips

Directions

In small pan melt candy coating over low heat. Stirring constantly. Line cookie sheets with waxed paper. Holding cookie with tongs. Dip entire top and 1 side of cookie into candy coating. Let excess drip off. Lay flat. Coated side up on cookie sheet.

Place on cookie sheet. Place 2 chocolate chips into coating for eyes. Let stand 10 minutes.

Old Fashioned Custard Pie

Ingredients

  • 3 large eggs
  • 1/2 cup sugar
  • 1/2 tsp. salt
  • 1/2 tsp. nutmeg
  • 2 2/3 cups milk
  • Unbaked pie shell

Directions

Beat eggs slightly, then add sugar, salt, nutmeg, and milk. Beat well together and pour into unbaked pie shell, then bake 40 minutes in 350 degrees F oven. Sprinkle with fresh ground nutmeg.

Making Better Pancakes

When making pancakes with any recipe, try adding a little extra kick.

Take one regular pancake mixture and add cinnamon, and a little nutmeg to taste. Then add just a little champagne. This makes them nice and fluffy as well as very tasty.

On top we add the fruit of the season. Makes a great family treat or a special breakfast for your sweetie.

Fruit Squares

Ingredients

  • 1 cup butter or margarine
  • 1 3/4 cups white sugar
  • 4 eggs
  • 1 tsp. vanilla
  • 1 tsp. almond
  • 3 cups flour
  • 1 tsp. baking powder
  • 1 tsp. salt

Directions

Cream together butter, sugar and eggs and add the rest of the ingredients and stir. Spread 1/2 of the batter on a greased 15x10 inch pan. Cover with 1 at pie filling (any kind) and drop spoonfuls of batter over filling. Bake at 350 degrees F for 45 minutes. Drizzle with glaze, if you wish.

Chimicheesecake

Ingredients

  • 10 to 12 (6 1/2-inch) flour tortillas
  • 16 ounces cream cheese, at room temperature
  • 1/2 cup granulated sugar
  • 1/4 cup plus 2 tablespoons flour
  • 2 eggs, beaten
  • 1 teaspoon vanilla extract
  • 1 (20 ounce) can cooked apples, very well drained
  • 1/2 cup almond toffee bits
  • Cinnamon sugar (1/2 cup sugar and 3 tablespoons ground cinnamon, mixed well)
  • Vanilla ice cream
  • Caramel topping

Directions

Beat cream cheese until fluffy; add sugar and eggs, then beat again. Add vanilla extract and mix well. Fold toffee bits and apple pieces in cheese mixture. On tortilla place a serving in the middle, about 2 1/2 inches from the side of shell. Tuck sides in slightly and roll shell to seal the filling and hold in the cream cheese. When shells have been stuffed and rolled, place in refrigerator; chill to set filling.

In deep fryer heat vegetable oil. When ready, place chimicheesecake and fry until slightly golden while carefully turning on each side. Remove from oil and drain.

Preheat oven to 350 degrees F. Place chimicheesecake on cookie sheet and bake for 20 to 25 minutes. Remove from oven and liberally sprinkle with cinnamon sugar. Serve cheesecakes slightly warm with vanilla ice cream and caramel topping. Makes 12 to 14 servings.

Sweet Taters 'N Black Walnuts

Ingredients

  • 6 large sweet potatoes
  • 1 cup hot milk
  • 3 Tbsp. butter
  • 2 Tbsp. melted butter
  • 1/2 cup sugar
  • 1/2 cup black walnuts
  • Pinch of salt

Directions

Peel sweet potatoes, boil and mash. Add hot milk, sugar, and 3 Tbsp. butter. Then add black walnuts and a pinch of salt. Place in greased baking dish, pour 2 Tbsp. melted butter over top. Bake 20-30 minutes in 350 degrees F oven.

Baked Apples

Use any good baking apple. Cut in half and core, but do not peel. Place in deep baking pan or dish. Pour some water around apples. Put on each apple: 2 Tbsp. of brown sugar and 1 tsp. of butter. Bake at 350 degrees F until done and tender. Baste once in a while and watch closely!

Ice Cream and Candy Shakes

Ingredients

  • 2 cups vanilla ice cream
  • 1/2 cup chopped candy
  • 1/4 - 1/2 cup milk

Directions

Combine 1/2 of ice cream and candy and 1/4 cup milk. In blender and blend until smooth. Add remaining ice cream and candy and blend until desired consistency, adding milk 1-2 Tbsp. at a time.
