Creamy Potato Puff
- 8 oz. pkg. cream cheese
- 4 cups mashed potatoes (hot)
- 1 egg, beaten
- 1/3 cup chopped onion
- 1/4 cup pimento (opt.)
- 1 tsp. salt
- dash pepper
In 1 qt. casserole, mix hot potatoes and cream cheese. Add rest of ingredients. Bake at 350 degrees F for 45 minutes, till lightly browned.
Note: Lowfat cream cheese works fine, but instant potatoes do not.
