Ingredients
- 1 lb. lean round steak
- 1 Tbsp. paprika
- 2 Tbsp. butter
- 2 cloves garlic, crushed
- 1 1/2 cup beef broth
- 2 large tomatoes, cut in eighths or canned whole tomatoes
- 1 cup sliced green onion, including tops
- 2 green peppers; cut into strips
- 2 Tbsp. cornstarch
- 1/4 cup water
- 1/4 cup soy sauce
Directions
Pound steak to a 1/4 inch thickness. Cut into 1/4 inch wide strips. Sprinkle meat with paprika and allow to stand while preparing other ingredients. Using a large skillet, brown meat in butter. Add garlic and broth. Cover and cook 5 minutes more. Blend in cornstarch, water and soy sauce. Stir into meat mixture. Cook and stir until clear and thickened. Add tomatoes and stir gently. Serve over a bed of rice.
