We have a main course but I would like some inexpensive salad ideas for 100 people. We would like to do two different salads, one of them can have meat but one of them needs to be vegetarian. Any ideas? Thanks - Sam

you will find many recipes for different number of people.

Pineapple pistachio salad
3 lrg. cool whip
9 3 oz. pistachio pudding & juice big lots or Martins
3 -4 C. min. marshmallows
3 8oz. cream cheese
3 # 2 can crushed pineapple
1 1/2 C. Nuts

Mix cheese pudding & juice. Add cool whip stir. Add
pineapple put in lrg. tupperware bowl & chill
overnight.

except for pudding everything else can be bought
at Aldis.Hope this helps.

Jell-o Applesauce Salad
3 Lrg. boxes strawberry jell-o $ store
6 C. boiling water
1 1/2 C. Red hots
6 C> applesauce (Aldis)

Dissolve jell-o & red hots in boiling water
(on stove) add applesauce chill well in
3 9x13 in pan.
VERY CHEAP & EASY

If you check www.allrecipies.com and put in for salads and you find a salad to liking you can customize for how many serving you want and they will give you all the ingredients and how much is needed.

What about potato or macaroni? You could also try an italian cold pasta salad which is easy...Rotini, green pepper, onion, celery, some parmesan and for dressing; use bottled italian dressing.
