Removing Shells From Hard Boiled Eggs

My request is: does anyone have an easy way to peel hard boiled eggs. I want to use them for egg salad, as an example. I recently got a couple dozen eggs for egg salad. I cooked them, but they were very hard to peel. This was even after being in placed the cold water and then in cold water again. Unfortunately my son found some egg shells in the egg salad. He was not happy. If anyone has any suggestions, please let me know. Thank you in advance.

Canning Upside Down

When canning I fill my jars up, clean their tops and cap them. Then I turn them upside down in the water bath canner I have. I process tomatoes and squash or Hobo Stew (which is left overs from the week cooked down and placed into a jar) for 50 minutes. I turn the heat off and do not touch the jars until the water is cooled. At that time, I pull the upside down quart or pint jars right side up and wipe them off. Normally they are all already sealed and I can place the jars in the cabinet right away.

Place Dishes Directly Into Soapy Water While Cooking

Here is a quick tip. This is something my mother taught me. I always keep a sink of soapy, hot water ready whenever I am cooking. I am constantly cleaning while I am cooking. By the time I am ready to serve dinner, I only have a few dishes to clean. This also helps with spills and splatters.

Banana Pastry Rolls

Wonton wrappers filled with banana cinnamon sugar mixture and fried in olive oil.

Ingredients:

  • 2-3 medium bananas
  • 1 Tbsp. cinnamon
  • 3 Tbsp. sugar
  • 6-8 wonton wrappers
  • 2-Tbsp. powdered sugar (optional for garnish)
  • Olive or Canola oil for frying

Directions:

Cut banana's into small 1/2 inch pieces. Mix with sugar and cinnamon in a medium size bowl until all the banana pieces are covered.

Place 1-2 Tbsp. of banana mixture into the center of the wonton wrapper. Wet edges and roll like you would an egg roll, sealing the edges.

Heat oil 375 degrees F. and fry until golden brown. Drain on paper towel, cool, sprinkle with powder sugar to garnish.

Servings: 6
Time:10 Minutes Preparation Time
10 Minutes Cooking Time

Garlic Fingers

These are a hit at parties.

Ingredients:

  • Pizza dough purchased from frozen food section.
Donair Sauce
  • 2/3 cup evaporated milk
  • 2 capfuls white vinegar
  • 3/4 cup sugar

Directions:

Thaw dough approximately 1 hour and spread evenly over pizza pan sprayed with vegetable oil. Let rise another 20 minutes and add grated mozzarella, bacon bits and garlic powder to taste. Bake at 375 degrees F. about 15 minutes and cut into strips 1 inch wide. Serve warm with sauce.

For sauce: Whip with beaters; If it is too thin add a little more vinegar until right consistency.

Pineapple Marinade

Great for Chicken or Pork.

Ingredients:

  • 1 cup crushed pineapple
  • 1/3 cup soy sauce
  • 1/3 cup honey
  • 1/4 cup cider vinegar
  • 2 cloves garlic, minced
  • 1 tsp. ginger powder
  • 1/4 tsp. cloves, crushed

Directions:

Mix all ingredients, marinate chicken or pork to your preferred amount of time and cook on the grill ;-)

Easy Lasagna Recipes

Here is a wonderful, easy and fast recipe for lasagne, courtesy of my daughter in law:

Ingredients

  • 1 package of frozen ravioli, any flavor
  • 1 8 oz shredded mozzarella (or more if you like. I always use more)
  • 1 jar of good quality pasta sauce (you may need more than one jar, but I don't find it necessary)
  • Optional:1 package frozen chopped spinach, defrosted and cooked and WELL DRAINED.

Directions

Cook ravioli and drain. I wait until they're cool to handle.

TIP: add a little oil to the ravioli or any kind of pasta while cooking and pasta won't stick together while cooking or after draining. This will make it easier to layer the ravioli when they're cool because they won't stick together. THIS TIP ESPECIALLY HELPFUL WHEN COOKING LASAGNE NOODLES.

Line a 13x9 inch baking pan with Pam. Spread a little pasta sauce on bottom of pan. Put one layer of ravioli on bottom of pan. Sprinkle mozzarella. Repeat process, making layers, as many that will fit your pan.

I usually top with remaining mozzarella because our family likes crisy cheese toppings, but you don't have to. If you decide not to, make your last layer with pasta sauce.

Bake at 350 degrees F. for 30 minutes or until bubbling.

If you decide to use the spinach, layer it with the cheese and bake as usual. But make sure it's drained completely otherwise this 'lasagne' will be watery.

So good, I use it a lot. We're an Italian family and even my 85 year old father approved it!

Scalloped Potatoes

Ingredients

  • 6-8 cooked potatoes, diced*
  • 1/2 lb. fried bacon
  • medium size onion
  • 1 can mushroom soup
  • 1 can cream of potato soup
  • Velveeta cheese
*Could use more potatoes, if desired.)

Directions

Cook onion in grease of bacon. Add onions and fried bacon to potatoes. Stir together soups and Velveeta cheese, to taste. Dribble a little milk. Cook at 350 degrees F for 1/2 hour to 45 minutes. By Robin from Washington, IA

Pork Chop Casserole

Ingredients

  • 3 medium potatoes, sliced
  • 1 can undrained green beans
  • 6 pork chops
  • salt and pepper, to taste

Directions

Place sliced potatoes in bottom of greased casserole. pour green beans over potatoes. Place pork chops over beans; salt and pepper. Bake for 45 minutes at 350 degrees F.

Heavenly Biscuits

Ingredients

  • 5 cups flour
  • 1 cup shortening
  • 2 cups buttermilk
  • 2 Tbsp. sugar
  • 5 tsp. baking powder
  • 1/4 tsp. soda
  • 1/2 tsp. salt
  • 1 pkg. dissolved yeast
  • 5 Tbsp. warm water
  • pinch of ginger

Directions

Dissolve yeast in warm water with ginger. Sift together the dry ingredients. Cut in shortening. Add buttermilk and yeast mix. Do not let rise. Roll out on floured board. Cut or shape at once and bake in 400 degrees F oven for 25 minutes.

Rhubarb Pie

Ingredients

  • 3 eggs, slightly beaten
  • 3 Tbsp. milk
  • 2 cups sugar
  • 1/4 cup flour
  • 3/4 tsp. nutmeg
  • 4 cups rhubarb, cut up

Directions

Mix together and pour into an unbaked pie shell and top with crust. Bake at 400 degrees F for 50-60 minutes.
