Spicy Veggie Burgers for Two

Love the kick of the jalapeno ;-)

Ingredients:

  • 1/2 15 oz. can of lima beans, drained
  • 1/2 small onion, chopped
  • 2 tsp. jalapeno pepper, chopped
  • 3 crackers, crushed
  • 1 small egg, beaten
  • 1/4 cup cheddar cheese, shredded
  • Salt and pepper to taste
  • 2 Tbsp. olive oil (not virgin)

Directions:

In a bowl, mash lima beans. Mix in onion, jalapeno pepper, crushed crackers, egg, cheese, salt, and pepper. Divide and shape into two patties.

Heat the olive oil in a skillet over medium-high heat. Fry patties until golden, about 5 minutes on each side.

I've not tried other than lima beans, mulberry204, but I don't see why any others couldn't be used instead :-) That would be fun to try because they all have such a different flavor :-) I think I'll try garbazos next and then lentils ;-)
