Orange Picante Pork Chops

Ingredients

  • 3/4 cup picante sauce
  • 1/4 cup orange juice
  • 1/4 tsp garlic powder
  • 4 boneless pork chops (about 3/4 inch thick)

Directions

Mix picante sauce, orange juice and garlic in shallow non metallic pan. Add chops and turn to coat.

Cover and refrigerate about 1 hour. Remove chops from sauce.

Grill or broil chops about 15 minutes or until done. Turning and coating with picante sauce mixture. Discard remaining sauce mixture.

Milk Chocolate Malt Brownies

Ingredients

  • 1 (11.5 oz) bag milk chocolate chips
  • 1/2 cup butter
  • 1 tsp vanilla
  • 3 eggs
  • 1 3/4 cups all purpose flour
  • 1/2 cup instant malted milk powder
  • 1/2 tsp. salt
  • 1 cup malted balls, coarsly chopped

Directions

Heat oven to 350 degrees F grease bottom and sides of 13x9 inch pan.

Melt chocolate chips and butter in saucepan over low heat stirring often, remove from heat. Cool slightly. Mix in sugar, vanilla and eggs. Stir in remaining ingredients except malted milk balls.

Spread batter in pan. Sprinkle with malted balls and bake 30-35 minutes or until toothpick comes out clean.

Raspberry Beet Greens Salad

An easy salad to make with fresh items from your garden.

Ingredients

  • Fresh, washed beet leaves with the stem out and torn into 1" pieces
  • Raspberries, fresh
  • Sugar
  • Oil
  • Vinegar

Directions

Add a little sugar over the top.

Pour a little oil over the top.

Add a little vinegar over it.

Mix, serve.

I also do a similar one with strawberries and spinach. Thought I'd change the greens and change the fruit and it is wonderful!

Mashed Potato Casserole

Ingredients

  • 5 lbs. potatoes (cooked and mashed)
  • 1 pkg. cream cheese
  • 1 cup half and half
  • 1/2 cup margarine
  • 1 tsp. salt
  • 1/2 tsp. seasoned salt
  • 1/4 tsp. pepper

Directions

Mix all together. Bake 30 minutes or until potatoes are hot at 350 degrees.. Nice to fix a day ahead and heat when needed. Allow extra time to bake if starting cold.

Frozen Strawberry Margaritas

Ingredients

  • 1 (60z) can frozen limeade concentrate,thawed
  • 1 package (10oz) frozen strawberries in syrup, thawed
  • 3 cups water
  • 3/4 cup tequila
  • 1 liter lemon lime soda, chilled

Directions

Place limeade and straberries in blender. Cover and blend until smooth add water and tequila. Pour into 2 quart plastic container. Cover and freeze about 24 hours or until slushy.

To serve, place 2/3 cup slush in a glass and fill with 1/3 cup soda, stir and enjoy. This is one of my favorites.

Oven Fried Picnic Chicken

Ingredients

  • 2/3 cup buttermilk
  • 8 chicken breast halves
  • 1 cup corn flakes
  • 1 cup flour
  • 2 envelopes (1 oz. each) ranch dressing mix (dry)
  • cooking spray

Directions

Heat oven to 400* cover large cookie sheet with aluminum foil.

Pour buttermilk into shallow glass pan or dish.

Add chicken, turn to coat. Let stand 5 minutes.

Place cereal, flour and dressing mix (dry) in blender. Cover and blend on medium speed until mixture becomes a coarse powder. Transfer to resealable plastic bag. Remove chicken from buttermilk mixture, discard buttermilk. Place chicken in cereal mixture. Seal bag and shake. Spray cookie sheet with cooking spray place chicken on cookie sheet.

Bake about 55 minutes or until juice of chicken is no longer pink.
