Joe's Corn Bread

Ingredients

  • 1 cup yellow corn meal
  • 1 cup all purpose flour
  • 1/4 cup sugar (opt.)
  • 1 tbsp baking powder
  • 1 tsp salt (opt.)
  • 1 cup buttermilk
  • 1/3 cup canola oil
  • 2 eggs, beaten

Directions

Oil an 8 or 9 inch glass pan with 1/4 cup oil, pour off excess leaving 2 Tbsp. in pan. Mix first 5 ingredients in medium bowl. Add slightly beaten eggs, milk, oil. Stir until ingredients are moist. Pour into glass pan. Bake in a preheated 400 degree F oven for 25 minutes.

Can add: bacon, onions, celery or corn, etc.
