You could make any flavor you want. Also cut it anyway you want to.Some ideas, cut in chunks, sliver thin, steaks, grind for sausage.

Slow cooked Mexican salsa flavor. Chinese stir fry. Roasted with stuffing and gravy with mashed potatoes. Pork and applesauce. Sauerkraut and pork for New Years.
Remember it is just another piece of pork, you can cut it your way.
