Chicken Broccoli Bake

This recipe incorporates several tasty, as well as healthy, "everyday" foods. It's a treat that's not a wallet buster! It makes a great dish for freezing in portions for a fast reheat.

Ingredients:

  • 1 lb. boneless/skinless chicken (breast is the healthiest!)
  • 2 (16 oz.) bags of frozen broccoli spears
  • 1 can cream of chicken soup
  • 1 can cheddar cheese soup
  • 1 cup bread crumbs, flavor of your choosing
  • 1 small block of Velveeta cheese (optional)

Directions:

Boil chicken till fully cooked, cube, set aside. Boil broccoli, drain and let sit in colander to make sure it's dried well. Open cans of soup, do not mix with water. Preheat oven to 350 degrees F.

In large pan (I usually use a turkey pan), layer half the broccoli. Spread the can of cream of chicken soup over top, then sprinkle 1/3 of the bread crumbs over that.

Next, layer all of the chicken, the can of cheddar cheese soup, and sprinkle 1/3 of the bread crumbs again.

Last, layer the rest of the broccoli and bread crumbs.

The option here is to put a layer of Velveeta over the top, for the mega cheese lovers - but, it does add a lot of unneeded calories, fat, etc.

Chicken Broccoli Casserole

Ingredients

  • 1 can cream of mushroom soup
  • 1 can cream of celery soup
  • 1 cup mayonnaise
  • 1 tsp. lemon juice
  • 3/4 tsp. curry powder
  • 1 bag frozen broccoli cuts, cooked and drained
  • 3 lbs. cooked chicken, cut up
  • 1 cup shredded Velveeta or cheddar cheese
  • 1 can French fried onions (2.8oz.)

Directions

Heat oven to 350 degrees F. Have chicken and broccoli already cooked. Lightly grease 2 square pans (8 inch) or 1 big pan. Whisk undiluted soups, mayonnaise, lemon juice, and curry powder in a bowl until well blended. Put the broccoli in the dishes, covering the bottom. Top with the chicken. Pour soup mixture over the chicken, spreading to cover. Sprinkle with the cheese. Bake 25-30 minutes or until slightly brown. Scatter onions over the top and bake 5-7 minutes more.

Chicken and Veggie Casserole

This is the BEST casserole I've ever had.

Ingredients

  • 2 cooked chicken breasts, or 1/2 chicken torn or cut into bite size pieces
  • 1 bag frozen broccoli (or any fresh or frozen veggies you like)
  • 1 cup mayonnaise
  • 1 can condensed cream of chicken soup
  • 1 can condensed cream of mushroom soup
  • 1 lb. shredded cheddar cheese

Directions

Preheat oven to 350 degrees F. In large casserole dish or dutch oven spray with non-stick cooking spray. Layer all the chicken on the bottom. Add frozen broccoli. Spread mayonnaise over the top of broccoli. Spread 1 can of condensed cream of chicken soup and then spread on top of that the other can of condensed cream of mushroom soup. Top with shredded cheddar cheese. Bake 45 minutes or until heated through.

Broccoli and Chicken Casserole

Ingredients

  • 4 ounces dried medium noodles
  • 2 and 1/2 cups chopped cooked chicken or turkey
  • 1 10-ounce package frozen chopped broccoli, thawed
  • 1/2 cup sliced green onions
  • 1 (10 and 3/4 ounce) can condensed cream of mushroom soup
  • 1/2 cup skim milk
  • 1/2 cup shredded Swiss cheese (2 ounces)
  • 1 tsp. dried basil, crushed
  • 1/8 tsp. pepper
  • Paprika

Directions

Cook noodles according to package directions. Drain well. In a 2-quart casserole stir together noodles, chicken or turkey, broccoli, and green onions. In a medium mixing bowl stir together soup, milk, cheese, basil, and pepper. Stir into noodle mixture.

Bake, covered, in a 350 degree F oven for 40 to 45 minutes or until heated through. Sprinkle with paprika. Makes 6 servings.

Make-Ahead Tip: Prepare casserole; cover and chill up to 24 hours. Bake as above.

Chicken Broccoli Casserole

Ingredients:

  • 5 cup diced cooked chicken
  • 2 pkg. thawed broccoli spears, diced (10oz. size)
  • 2 cans cream of chicken soup
  • 3/4 cup mayonnaise
  • 1/2 cup milk
  • 2 tsp. lemon juice
  • 1 box stuffing mix (for chicken)
  • 1/2 cup melted margarine or butter

Directions:

Place chicken and broccoli in layers in 9x13 casserole. Mix soup, milk, mayonnaise and lemon juice. Spread on top of chicken and broccoli. Put stuffing on top. Pour melted margarine or butter over mixture and bake 1 hour at 350.

Chicken Broccoli Casserole

This is a yummy one-dish meal. Very economical and very tasty. Casseroles, I think, are the perfect cold-weather meal.

Ingredients:

  • 1/2 cup mayonnaise
  • 1/4 cup flour
  • 1 cup chicken broth
  • 1/2 cup milk
  • 1/2 tsp. onion, grated
  • salt and pepper, to taste
  • 4 cups chicken, cooked and diced
  • 10 oz. frozen broccoli, cooked and drained
  • paprika

Directions:

Lightly mix mayonnaise and flour in saucepan. Gradually blend in broth, milk, onion, salt and pepper. Cook over low heat, stirring constantly, until thickened. Mix in chicken. Arrange broccoli in greased 8x8 inch baking dish. Cover with chicken mixture. Sprinkle with paprika. Bake at 350 degrees F for 25 minutes or until thoroughly heated.

Servings: 4

Cooking Time: 25 Minutes

Classic Chicken With Broccoli

Take about 2-3 broccoli stalks and steam in microwave for approximately 6-7 min. While that is cooking, cut up 2 boneless, skinless chicken breasts into cubes and saute in a frying pan until opaque.

Then add in to one bowl: 1 can of cream of chicken (or cream of celery) soup, 1/2 cup of mayonnaise, and 1 tsp. of lemon juice. (add 1/2 tsp of curry powder if you go for the flare) Combine mixture.

Take broccoli out of microwave, put the chicken on top of the broccoli. Take wet mixture and poor over chicken and broccoli. Then take some shredded cheddar cheese and cover. Put in oven to bake for approximately. 35-40 min. Very rich, but tasty!

Chicken Broccoli Casserole

Ingredients

  • 2 pkgs. frozen broccoli or 1 fresh bunch
  • 2 cups sliced cooked chicken
  • 1 can cream of chicken soup
  • 2/3 cup mayonnaise
  • 1/2 tsp. curry powder
  • 1 tsp. lemon juice
  • 1/2 cup grated sharp cheddar cheese
  • 1/2 cup soft bread crumbs
  • 1 Tbsp. melted butter

Directions

Cook broccoli in boiling salted water until tender; drain. Arrange in 8x8 inch glass baking dish for flowerets facing outward. Place chicken on top. Add combined soup, mayonnaise, lemon juice and curry powder. Pour over chicken. Sprinkle with cheese. Combine crumbs and butter and sprinkle over all. Bake at 350 degrees F for 25-30 minutes.

This is very much like the one I make with the exception I add a thin layer of cooked rice on the very bottom and then continue to layer. This is such a delicious recipe!!! Thanx, Robin!!! (05/09/2008)

Chicken Broccoli Casserole

Ingredients

  • 4 chicken breasts (2 split) boiled
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 cup chicken broth
  • 4 oz. Velveeta cheese
  • 1 can onion rings
  • 2 pkg. broccoli (or fresh) cooked (10 oz. size)
  • 1 can mushrooms

Directions

Mix all soup and broth together and place a little sauce on bottom of greased baking dish. Place chicken on sauce, then broccoli and mushrooms. Next add grated cheese on top of vegetables. Pour rest of sauce over whole thing. Bake 40 minutes in 325 degree F oven. Put onion rings on top and bake another 10 minutes. Serve over hot cooked rice.

Chicken Dressing Broccoli Casserole

Ingredients

  • 2 pkgs. chopped frozen broccoli
  • 1 cup grated cheddar cheese
  • 1 to 2 cups cooked chicken (or turkey)
  • 1 pkg. Stovetop dressing mix
Sauce:
  • 1 cup milk
  • 1 cube butter (1/2 cup)
  • 1/4 cup flour
  • 1 cup chicken broth
  • 1/4 cup mayonnaise

Directions

Prepare dressing as directed on box. Make sauce (with all ingredients EXCEPT mayonnaise), when bubbly - add mayonnaise and blend well. Grease 9x13 inch pan, layer broccoli, chicken, dressing, then cheese. Spread sauce over top and garnish with crushed potato chips. Bake at 375 degrees F for 1 hour. This makes a large casserole!
