BBQ Leftover Home Fry Plate

Ingredients

  • 3 large russet potatoes
  • Leftover BBQ plate from your local BBQ restaurant (beans, slaw and pulled pork)
  • one medium onion - chopped finely
  • oil for frying potatoes
  • salt and pepper

Directions

Take potatoes (leave skin on) and cut into medium size chunks. Place in microwaveable bowl; put two tablespoon of water; microwave at high power for 8 minutes, after four minutes of cooking time, stir the potatoes. Allow to cool.

Cover the bottom of a cast-iron skillet with oil (make sure skillet is hot before adding potatoes). Add salt and pepper to taste; add onion and saute stirring constantly until soft; add salt and pepper to onion after adding to mixture.

Add leftover BBQ plate items to the skillet, mix well and stir until heated.

Enjoy this leftover meal.

Serve with Texas Toast, corn on the cob, sour cream on the top, jalapeño peppers, shredded cheese on top or just plain with BBQ sauce.

Fry potatoes until golden brown (keep turning until all sides are golden.

Sounds interesting....like BBQ Hash. I'll try this next time I have BBQ leftovers. Thanks for the idea.
