Mix milk, water, lemon juice, Bisquick, beaten eggs, softened margarine and vanilla in a blender on low for 3 minutes. Pour into 10 inch greased pie plate. Let stand 5 minutes. Sprinkle coconut over top. Bake for 35-40 minutes in a 350 degree F oven until knife inserted comes out clean. Cool slightly and serve.

Is Eagle Brand milk the same as either evaporated or condensed milk? And what is Bisquick? I would love to make this.
Eagle brand milk is sweetned condensed milk. It is not the same as evaporated milk but you can probably find it on the same aisle as teh condensed milk.
Bisquick is just a bisquit mix that already has the shortning and baking powder in it. You just add milk or water to make bisquit. There are a lot of bisquit mixes on the market. I use Bisquick but Pioneer bisquit mix is a good one too.
