Rhubarb Cream Pie

On 5/28/04 you had reader request for Rhubarb Pie receipe. This one is my favorite. Comes from the First Mennonite Church Cookbook.

Rhubarb Pie

  • 1 1/2 cups sugar
  • 1 tablespoon flour
  • 2 beaten eggs
  • 2 cups finely chopped rhubarb
  • 5 tablespoons of water

Put rhubarb into unbaked pie shell. Mix all other ingredients in a bowl and pour over rhubarb. Top with pieces of butter and cinnamon and bke in 350* oven for 1 hour.

I like to use the smallest, most tender rhubarb and chop if very fine. Enjoy!

Rhubarb Cream Pie

Ingredients

  • 1 1/2 cup sugar
  • 3 Tbsp. flour
  • 1/2 tsp. nutmeg
  • 1 Tbsp. butter
  • 2 eggs (beaten)
  • 3 cup rhubarb
  • 1 unbaked pie crust

Directions

Mix altogether. Pour into pie crust and bake 10 minutes at 450 degrees F, then 30 minutes at 350 degrees F. Can put meringue on top, if desired.
