Sweet and Sour Curry Chicken

Ingredients

  • 1 lb. boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 can (14 1/2 ounces) stewed tomatoes, cut up
  • 1 large green pepper, cut into 1-inch pieces
  • 1 large onion, sliced
  • 1/2 cup mango chutney
  • 2 Tbsp. cornstarch
  • 1 1/2 tsp. curry powder
  • 1/4 cup water

Directions

In a 3-qt. slow cooker, combine the chicken, tomatoes, green pepper, onion and chutney.

In a small bowl, combine the cornstarch, curry powder and water until smooth; stir into chicken mixture.

Cover and cook on low for 4 hours or until chicken juices run clear.

Super good!

I sent the recipe in. I assume that it can be done on the stove at low heat. I've never tried it.

If you you do try it please give feedback about the results.

I just read a newspaper article on using slow cookers. An hour on the stovetop equals two hours on high or four hours on low in a slow cooker...so that would make this recipe an hour on top of the stove.

I like the look of this curry chicken recipe but I don't use a slow cooker. Can this be done on the top of the stove or in the oven. TIA
