Today's Recipes
Tuna and Celery Casserole
Ingredients
- 2 cans cream of celery soup (10.5 oz)
- 2 cans of tuna (6oz) + 2 cans water
- 1 1/2 cups of cooked rice
- Salt and Pepper to taste
- Butter
Directions
Take the tuna and put into a sauce pan w/the water;stir w/whisk until lumps are out. Add the butter, salt and pepper simmer until very hot. Serve soup mixture over the cooked rice.
There are variations that you may like better such as: saltines or cooked noodles instead of rice. Also shredded or grated cheese over top.
Believe me we have tried them all thru the years.
This serves 6-8 people.

Mock Pate
Ingredients
- 1 (12 oz.) pkg. liverwurst (room temperature)
- 12 Tablespoons chopped fresh parsley
- 6 teaspoons minced onion
Directions
Mix well with a fork; chill for 8 hrs or overnight. Serve with crackers, chips, fresh veggies, etc.

Mushroom Meat
Ingredients
- 1 package cube steak
- 1 envelope Lipton's Golden onion soup mix
- 1 can of cream of mushroom soup
- 1 can mushrooms (pieces and stems)
- salt, pepper, flour, oil
- milk (enough to fill empty cream of mush. soup can)
Directions
Salt, pepper, and flour the meat. Brown in hot oil. In the meantime, mix the mushroom soup, mushroom pieces, and milk together in a bowl. This is your gravy. Remove meat and drain skillet. Place meat back in skillet and using 1/2 of the Lipton soup mix, sprinkle on meat. Pour in the gravy. Simmer 45 minutes to 2 hours.
Tips: I usually cut the pieces of meat in half. Sometimes I also use water in place of milk. The other half of the Lipton soup mix I toss in my mashed potatoes as I am whipping them up. Usually I soak the meat in it's package in milk (for tenderness) for a couple hours.

Personalized Omelets
This is a fun, easy and fast way to make all those different omelets, for a family breakfast.
Directions
Put the various chopped ingredients you may want, into individual bowls. (ham, cheese, peppers, tomatoes, onions, etc.)
Give each person a ziplock freezer bag, with their name written on it in permanent marker, and 2 eggs cracked into it. Have everyone add their own ingredients into the bag they have. Zip up the bags. Now you have your individual omelets ready to cook. You can place all of the bags in a large pot of water, you have pre-boiled. Boil this for 15 - 20 min. You can take this time to make toast, or the rest of the meal. Each omelet will slide out of the bag, and onto the plate, of whoever created it and they all are ready at the same time! No more waiting for everyones to be cooked, one at a time! (These can also be done in the microwave, in individual bowls.)
We do this on holidays, when we have a lot of family eating together.

Dump Cake
Dump Cake I
Ingredients
- 1 med. can crushed pineapple
- 1 can cherry pie filling
- 1 box white cake mix
- 1/4 cup butter
Directions
Put crushed pineapple on the bottom, then put cherry pie filling on top of the crushed pineapple. Put the cake mix on top and press down with melted butter. Bake in a 9x13 cake pan at 350 degrees for 35 to 40 minutes or until looks like cake.

Dump Cake II
Ingredients
- 2-16 oz. can of pie filling (any)
- 1-box of white cake mix
- 2-3 sticks of oleo
- 1 cup chopped nuts
- 13 X 9-inch pan
Directions
Pour pie filling into bottom of pan. Sift dry cake mix over pie filling, cut oleo into patties and thoroughly cover cake mix. Sprinkle nuts over oleo.
Bake at 350º for 45 min or until brown.
You can use the can fruit of your choice.
I've tried apple, blueberry, cherry and peach and they all fantastic!

Pound Cake Recipes
Pound Cake
Ingredients:
- 2 cup butter
- 6 eggs
- 1 tsp. baking powder
- 1 cup milk
- 1/4 tsp. nutmeg
- 3 cups sugar
- 4 cups all purpose flour
- 1/2 tsp. salt
- 1 tsp. vanilla or lemon extract
Directions:
In a large bowl, cream butter, sugar and eggs. In a medium bowl, sift dry ingredients. Pour dry ingredients into butter mixture. Mix well. Add milk and extract. Pour into a loaf baking pan. Bake at 300 degrees for 1 hour and 20 minutes or till it tests done.

Easter Pound Cake
Ingredients
- 1 cup (2 sticks) Butter
- 2 cups Sugar
- 4 Eggs
- 3 cups all purpose Flour
- 3 tsp Baking Powder
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 2 cups Sour Cream
- 1 tsp Vanilla Extract
Directions:
Cream butter; add sugar and cream together. Add eggs one at the time mixing well after each. Add vanilla to above mixture.
Sift flour, baking powder, baking soda and salt together and add to mixture alternately with sour cream. Mix well, but do not overbeat.
Batter will be thick. Spoon batter into 2 loaf pans which have been lightly greased and floured. (Shake out excess flour)
Bake at 325º F for 50-60 minutes checking for doneness after 50 minutes. If not done in the middle, return to oven for the other 10 minutes. Check again for doneness.
Because of the various sizes of eggs used, the moisture content of flour, and your own oven temperature accuracy, it could take an additional 10-15 minutes to get properly done.
Pound cakes are most often baked at a lower temperature than other cakes, giving the eggs a chance to do all the leavening, but this cake has both baking powderand baking soda as well, so it will rise more quickly and thoroughly.
When done, cool in pan on wire rack for 5-8 minutes, then turn loaves out onto wire rack and cool thoroughly.
Optional: Dust tops lightly with a mixture of 1/4 cup sugar and 1 tsp ground cinnamon, or use confectioner's sugar to make a lacy design with a paper doily.

Colonial Pound Cake
Here is another pound cake that is even easier.
Ingredients
- 2 sticks Butter
- 1 1/2 cups Sugar
- 1/4 tsp Mace
- 5 Eggs (large)
- 2 cups all purpose Flour
- 1/2 tsp each of vanilla, orange and almond extracts (Optional)
Directions
Cream butter and sugar. Add eggs one at the time, mixing really well after each addition in order to obtain the maximum volume of the eggs
Sift flour with mace and fold into above mixture,
mixing well, but do not overbeat. It will toughen
your cake.
Spoon thick batter into a greased and floured
loaf pan. Bake at 325º F for 1 hour, then
testing for doneness. It may take longer (an
additional 10 minutes or so) for your cake to
reach the desired doneness. Check it again after 10 minutes.
When done, remove from oven and allow to cool
on in pan on wire rack for about 5-8 minutes, then turn out onto wire rack and allow to cool thoroughly.
You may choose to lightly glaze this pound cake
with a mixture of undiluted frozen orange juice
and confectioner's sugar. Use about a cup of
confectioner's sugar with 2 TBS orange juice. Add
more sugar or juice to get desired pouring consistency.
Pound Cakes are the most versatile cake to keep on hand. It can be served with sour cream, whipped cream (flavored or unflavored), ice-cream or fruits (fresh, canned or frozen).

Never Fail Pound Cake
Ingredients:
- 1 lb. box powdered sugar
- 3 cups all purpose flour
- 1 teaspoon vanilla or lemon extract
- 6 eggs
- 3 sticks margarine
Directions:
Melt the margarine and let cool. In a large bowl, sift your flour and powdered sugar. Mix all ingredients and bake in a loaf pan. Put in cold oven and then turn on to 325 degrees for about 1 hour or till it tests done.

Pound Cake II
Ingredients
- 3 cups sugar
- 8 eggs
- 3 cups plain flour (sifted)
- 2 cups butter
- 1/2 tsp. salt
- 1 Tbsp. baking soda
Directions
Cream butter and sugar thoroughly, add flour 1 cup at a time then add salt and baking soda. Add eggs 1 at a time mixing thoroughly. Grease 1 tube pan or 2 loaf pans. Preheat oven at 300º, bake for 1-1/2 hrs.
Using real butter would only make it more delicious!

Yummy Orange Balls
Ingredients
- 1 stick Butter, melted
- 1 (12 oz.) pkg. Vanilla Wafers (put in zippered bag and roll a glass over them to crush)
- 1 (1 lb.) box powdered sugar
- 1 cup pecans or walnuts, finely chopped
- 1 (6 oz.) can frozen orange juice, thawed
- Finely grated coconut
Directions
Mix crushed vanilla wafers, sugar and nuts. Add melted butter and thawed orange juice; mix well. Roll into small balls and roll them into finely grated coconut. Store in refrigerator overnight before serving.
Serve these in Fall or Winter with coffee or hot tea. These freeze well, IF you have any left.

Homemade Kahlua
Ingredients
- 3 cup boiling water
- 3 cup granulated sugar
- 1/2 cup instant coffee
- 1 Qt. vodka
- 2 inch piece vanilla bean
- Dash of salt
Directions
Bring water to a boil. Add vanilla bean and sugar. Let dissolve. Simmer for 10 minutes. Add salt and instant coffee. Let cool completely. Add vodka. Seal it don't drink for 30 days.

Apple Crisp
Apple Crisp I
Ingredients
- 6 apples (peeled & sliced)
- 1/2 cup light brown sugar (firmly packed)
- 1 Tbsp. cinnamon
- 1 1/2 cup graham cracker crumbs
- 3 Tbsp. melted butter
Instructions
Put layer of apples, then sprinkle with brown sugar & cinnamon mixed together. Repeat till all is used. Sprinkle with graham cracker crumbs, then with melted butter. Bake at 350 degrees F for 30 minutes.

Apple Crisp II
Ingredients:
- 4 stick butter
- 4 cups flour
- 6 apples (sliced)
- cinnamon
- 4 cups sugar
- 1 1/2 cups oatmeal
- Lemon juice
Directions:
Mix together. Layer with apples, cinnamon, and sugar. Sprinkle with a little lemon juice to bring out flavor of apples. Fills two 9x13 inch pans. Bake until bubbly, topping browns, at 325-350 degrees F.

Apple Crisp III
Ingredients
- 1 cup flour (sifted)
- 1 1/2 cup sugar
- 1 tsp. baking powder
- 3/4 tsp. salt
- 1 egg (unbeaten)
- 1/3 cup shortening
- 1/2 tsp. cinnamon
Directions
Use enough apples peeled and cut up to fill a 9x13 inch baking dish. Put shortening on top and then sprinkle cinnamon over top. Bake 350 degrees for 30 to 40 minutes.

Ingredients
- 3/4 cup flour
- 3/4 cup lt. brown sugar
- 1/2 cup oatmeal
- 1/3 cup nuts (chopped)
- 1 stick oleo
- 4 cups sliced apple
Directions
Spread apples in an ungreased 8" pan. Mix the remaining ingredients w/fork and sprinkle over apples. Bake in preheated oven at 375º for 30 min or until the apples are tender.
I've always used the loaf pan and it worked perfect.
