Bacon Corn Casserole

Ingredients

  • 1 can whole kernel corn, drained
  • 1 small green pepper
  • 1 small red sweet pepper
  • 1 small onion
  • 6 strips bacon, crisply fried
  • 3/4 cup bread crumbs
  • 1 egg, beaten slightly
  • 3/4 cup milk
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • crumbs for top
  • butter or margarine for dotting top

Directions

Fry the bacon, remove from fat, and when cool bread bacon into small pieces. Slice the pepper and onion and fry in 2 Tbsp. bacon fat. To the peppers and onion add the corn, bread crumbs, beaten egg, milk, salt, pepper and bacon pieces. Stir everything together and pour into a buttered casserole. Cover with a deep layer of bread crumbs, dot with plenty of butter or margarine and bake at 375 degrees F until it is very hot all the way through and crumbs are a deep brown.
