Easy Picante Chicken

A quick and easy way to make a tasty chicken dish. Using foil to line the pan makes for an easy clean-up.

Ingredients:

  • (4) Boneless chicken breasts, cut up
  • 1 1/2 cup picante sauce
  • 3 Tbsp. brown sugar
  • 1 Tbsp. Dijon mustard
  • 1 tsp. lemon juice
  • Hot sauce/Tabasco to taste, optional
  • Sauce, optional… see below

Directions:

In foil-lined 13x9 inch pan, thoroughly mix picante sauce with brown sugar, mustard, lemon juice and hot sauce/Tabasco, if using. Add chicken breasts and coat with mixture.

Bake at 400 degrees F for 25-30 minutes or until tested done. Serves 4. Serve with rice if desired.

For Sauce: After removing chicken from pan, place pan in oven, reduce heat to 350 degrees F. Heat in oven for 5 minutes or until slightly thickened. Serve over chicken.

Make extra sauce by halving the ingredients minus the chicken, mix well and cover; microwave on medium power until hot and bubbly.
