Lemonade Bars

I like this because the lemon flavor is very real and the oatmeal makes it a little more healthy than most. You can also do the sugar substitute to make it even healthier.

Ingredients:

Crust
  • 1 1/4 cups flour
  • 1 cup oatmeal, quick cooking kind
  • 1 cup low calorie margarine
  • 1/2 cup powdered sugar

Topping

  • 4 eggs or egg substitute
  • 2 cups sugar or sugar substitute
  • 1 can undiluted lemonade
  • 1/2 cup flour
  • 1/2 tsp. baking powder
  • 3 Tbsp. powdered sugar

Directions:

Preheat oven to 350 degrees F. Mix crust ingredients and press into bottom of a 9x13 inch pan that has been sprayed with cooking spray. Bake for 17 minutes. Mix together topping. Pour onto crust. Bake for another 25 to 30 minutes until done. Cool well and cut into bars. Sift powdered sugar over the top of bars.

Note: In filling, I think you could use 1/2 cup less sugar if you want them to be tart.

Time:10 Minutes Preparation Time
42 - 47 Minutes Cooking Time

Ones I've made in the past used the 6 oz. can of frozen lemonade. But sometimes they are hard to find in that size and you have to go ahead and buy the 12 oz. size. Just slice the can (it's really a cardboard can usually) and make 2 recipes of the bars or put the other in a ziplock bag and freeze till needed. Undiluted means do not mix with water. Use straight out of the can as is.
