For a really creamy potato or macaroni salad, add a tablespoon or two of sour cream.

Have you tried the no-fat versions? All the flavour, substantially less impact on our weight .... No-fat yoghurt is nice as well.

I add sour cream to my potato salad, macaroni salad, tuna salad etc.
However, if I don't have sour cream on hand, I will use some bottled ranch dressing.
This is really good too.
