Banana Stuffed French Toast

I love to make different things for Sunday breakfast or Holiday brunches but don't like recipes that are highly complicated. This recipe is as easy as making a sandwich yet tastes very "fancy".

Ingredients:

  • 6 large eggs
  • 1/4 cup of half and half
  • 6 very ripe bananas
  • 1/8 tsp. of nutmeg
  • 8 slices of bread your choice in type
  • 1/2 stick of butter plus or minus for cooking
  • cinnamon to taste
  • 1/2 cup of pecans or walnuts (optional)

Directions:

In a large bowl beat eggs til foamy with a fork. Stir in the half and half, nutmeg and cinnamon-set aside

Peel bananas and mash with a fork in a separate bowl. Stir in nuts if using.

Lay out 4 slices of bread and spread with banana mixture. Top with remaining slices of bread. Press together firmly to seal.

Place each sandwich one by one into the egg and half and half mixture coating each side and letting sandwich set for a minute or two until saturated.

In frying pan over med heat melt 1 tablespoon of butter for each sandwich being cooked. Fry to shade of brown that you prefer and flip to cook the other side. If you need a little more butter to fry add before you flip.

Lightly dust with powdered sugar and serve with your favorite topping, preserves, or syrup.

Time:10 Minutes Preparation Time
4-6 Minutes Cooking Time
