Lazy Day Casserole
- 2 small onions, chopped
- 1 1/2 cups diced celery
- 1 Tbsp. oil
- 1 lb. ground chuck
- 1/2 cup rice
- 1 can cream of mushroom soup
- 1 can chow mein noodles
Saute' onions and celery in oil in skillet. Brown ground chuck in skillet, stirring until crumbly. Pour off drippings. Add vegetables, rice and soups. Pour into 2 qt. casserole. Bake, covered, at 400 degrees F for 35 minutes. Sprinkle noodles over casserole. Bake, uncovered, for 10 minutes.
